Mac & Cheese Kind of Day

It’s been quite the day, this whole working-from-home-because-I-might-infect-other-people-in-my-office thing.  I’ve been working via email, and in between running up- and down-stairs doing laundry.  I feel great, except for the fact that I just about keeled over every time I got back upstairs with a load.  Seriously though, I was gasping for air!  I suppose that means I shouldn’t work out or overexert myself anytime soon, and I’m actually really struggling with that.  I feel like I’ve gained 20 pounds (I know, I know, not realistic) over the past 2 days since I haven’t worked out.  Don’t yell at me, I know that’s stupid!

Lunch was some frozen mac & cheese:

I doctored it up with some ground pepper a sprinkling of shredded cheese so it wouldn’t taste so frozen 🙂  It was OK – I really wanted to eat something healthier, but I couldn’t think of anything we had on hand that I could have made that had a consistency that would be easy on my throat.  So it goes!

Tonight we’re having our friend Amy over for dinner, and I’m going to make Sausage, Onion, and Pepper Hoagies (woohoo!) with a side salad, and I’m going to try my hand at some parsnip fries.  I’m excited and a little scared (Salah, you might be the only one who gets that reference!)  I’ve heard so many good things about them, so I’ll definitely keep y’all in the loop on that 🙂  Otherwise I’m just hoping it’ll be a super-restful evening!

What’s your favorite Thursday night activity? I remember when I was in high school and college EVERYONE went out to celebrate Thursday nights…but now I love nothing more than staying at home and watching my favorite shows in my pajamas!

    Thursday night used to mean partying, but these days it’s just a normal day with an evening watchinf American Idol 🙂

    I’m not going to tell you to shut up! I think we’ve all felt that way…as long as you recognize that it’s just a feeling and not necessarily reality! (And that, even if you DID gain 20 pounds, you wouldn’t be any less of a person). Love ya, girl! 🙂

    I remember Thursday nights being huge going out nights in college! I can’t even imagine going out right now… Mama needs her sleep 🙂

    For us Thursday night means “The Office” and running our daughter to and from Girl Scouts.
    Back in high schoo Thursday nights were all about 90210 🙂
