Hey guys! Happy Friday to you all 🙂 I’m actually still sick, so I’m waiting for the doctor’s office to open so I can hopefully make an appointment. There’s a new, weird development: my skin hurts! Not my muscles, but my skin is sore to the touch…anyway, I hope I can get in to see someone today because that doesn’t seem normal.
Dinner last night was Sausage, Onion, and Pepper Hoagies with a big side salad!
I tried my hand at the nut butter parsnip fries I saw on Oh She Glows last week too. MAJOR FAIL. They tasted horrible and the texture kind of grossed me out. Guess I know that I don’t like them now! The sandwich, however, was fabulous:
- 1 pound turkey sausage links
- 1 red bell pepper (or whatever color you like), sliced into 1/2 inch strips
- 1 onion (I used a yellow onion), sliced into 1/2 inch strips
- 3 cloves garlic, minced
- 1 tsp each of dried basil and dried oregano
- 1/2 tsp red pepper flakes
- salt and pepper to taste
- 1/2 cup prepared marinara (I used a jarred sauce)
- 1/2 cup water
- 5 hoagie rolls
- mozzarella cheese
In a skillet over medium heat, heat 1 Tbsp of olive oil. Add the sausage links and cover, cooking for 5 minutes on each side. Remove from heat onto a plate and cover with foil. In the same pan, add the peppers and onions and 1 Tbsp of water to deglaze the pan. Cover and cook for 3-5 minutes, stirring frequently, until vegetables are tender. Add the garlic and cook for another 1-2 minutes. Then add the marinara and 1/2 cup of water and stir to combine. Cover and cook for about 3-5 minutes. Meanwhile, cut the turkey sausage links into 4-6 pieces per link. Add back to the skillet and cook for 1-2 more minutes. Remove from heat and serve either by itself or in a hoagie roll topped with a little mozzarella. Done!

We also had some break ‘n’ bake chocolate chip cookies, but I didn’t take pictures of those. Basically as soon as we were done eating and cleaning up I went to bed. I was SUCH a party pooper, but I felt horrible and figured sleep would be just what I needed!
This morning I got up and realized that I still felt bad and should likely go to the doctor. My mom mentioned I might have the flu, which scares the crap out of me, so if that’s the case I want to make sure I can get better soon! I had leftover split pea soup for breakfast because it just sounded good:

So this is actually not a HUGE issue in my marriage, but I did have quite a few of you write in about this little issue, AND it’s something that definitely needs to be addressed in my workplace 🙂 When you load the dishwasher, do you prefer to leave the food particles/sauce/etc on the dishes, or rinse and scrape them completely before putting them into the dishwasher?
