Good morning! How is everyone on this fine Thursday?
Let’s start off with last night’s fabulous eats before we go any further…we had Amy over for dinner and made a turkey/artichoke/spinach/provolone panini thing and Chelsea’s Roasted Tomato Soup! Basically the sandwich was a massive loaf of Italian bread that I cut in half, then layered deli turkey and provolone on one half. On the other half I first chopped up some canned artichoke hearts and spinach, then tossed it with a little Greek salad dressing. The key to the sandwich is to make sure you put the cut side on the outside. This makes it nice and toasty brown when you cook it!
When it was done we split it in thirds and each took that with a cup of the soup (followed directions to a T). This soup was SOOO good…definitely a great accompaniment to the sandwich. I only wish there were leftovers 🙂 ‘Twas a perfect dinner, and the portions ended up being great for my level of hunger!
Last night I also did another blogger recipe with my own little “twist”: Jessica’s Cookies ‘N’ Cream Cupcakes turned into a regular cake! Why a regular cake? Well, because I’m 1) too lazy to do individual cupcakes (or cookies for that matter) and, 2) logisitcally it just doesn’t make sense to drag a billion cupcakes up to work along with all of my lunch supplies and the dogs. So, regular cake it is!
I must say, it’s another successful treat day thanks to this! You guys should seriously check out Jessica’s recipes…they’re amazing and foolproof!
I feel like I’m finally catching up on sleep now, too, which is an amazing feeling. This morning I got up and did a 25-minute yoga flow with tons of Warriors (LOVE) and then got ready for work. I had the same breakfast sandwich as yesterday, but this time I added some Frank’s to it:
As suspected, this was exactly what it needed. I’m still craving the flavor, even though I’m still full from it!
And instead of coffee this morning (primary reason: the skull mug is in the dishwasher) I stopped at McDonald’s (the epitomy of health, I know) and got a $1 Diet Coke. I was STOKED to see the Olympic stuff on it!
I don’t know about y’all, but I ADORE the Olympics – Summer, Winter, it doesn’t matter. It’s such an amazing thing to see so many world-class athletes with incredible stories just achieving their dreams! It truly makes my heart happy 🙂 This year I also have a special connection to them because the company I work for sponsors the US, Canadian, and Jamaican ski teams! I can’t wait to DVR every event and not have a life for 2.5 weeks while I watch it all (OK, except maybe curling. Sorry.)
What about you guys? Do y’all love the Olympics as much as I do? Any favorite Olympic sports? I know in the summer I love Beach Volleyball, anything Track + Field, gymnastics, and swimming. In the winter I love the ski events, hockey, figure skating, and speed skating!

I LOOOOOVE the Olympics! I was a very competitive fencer when I was younger and one of my good friends has actually won the gold medal in the past two summer Olympics!

Love the Olympics! In the summer I love beach volleyball and track and in the winter I love ANYTHING that takes place on skis! Mainly because I find it so impressive!

So excited for the Olympics. My sister and I used to tape the gymnastics competitions and then watch them again for another 4 years… we would put on our leotards and pretend we were gymnasts. Ok, I think that was just once with the ’92 Olympics. Once I discovered skiing I was obsessed with that and wishing I could be that good!

I LOVE the Olympics! Although, I do tend to prefer the summer over the winter. My favorite is definitely the figure skating (I’m a girly girl, what can I say, haha).
