Eat Your Corn!

Happy Friday!  That week flew by, didn’t it?!

I had a tinge of guilt yesterday as I drank my Diet Coke with breakfast and reading the guest post on Health for the Whole Self…about how to ditch the diet-soda drinking.  Guess the irony gods were having fun with that one…

I also had a burrito lady burrito with Italian sausage…SO GOOD!  If you haven’t noticed, I really love these burritos.  They’re super flavorful with awesome salsa and super soft tortillas.  What’s not to love?

Since yesterday was Thursday, it meant treat day at the ol’ office.  I, of course, went for one of Jessica’s recipes:  Salty Caramel Turtle Cookies (bars in my lazy case):

As usual this was an incredible recipe!  I had to use walnuts because I couldn’t justify the price Whole Foods was asking for pecans and I didn’t want to drive anywhere else.  So sue me 🙂  BUT I do wish that I’d melted a few of the caramels and drizzled them on top…just to get a little bit more of that buttery sweetness!  Lesson of the day?  Always make Jessica’s recipes.  The end.

Lunch was simple:  a bowl with about a 1/2 cup of plain, boiled lentils, the kernels from one ear of corn, 4 oz of grilled chicken, and about 3-4 Tbsp of 505 Green Chile Salsa:

There was also a serving of tortilla chips that I used to dip with, but let’s face it:  they were ugly.  And this bowl was ugly (albeit delicious) enough!  The flavors all went really well together though:  the peppery lentils, the sweet roasty corn, the savory chicken, spicy salsa, and the salty chips. And the best part is I’m having another today!

On a side note, I’ve found that it’s insanely difficult to find a maxi dress that I like, that fits well, that is long enough, and that isn’t ridiculously overpriced ANYWHERE in the state of Colorado.  Granted, I haven’t looked everywhere, but over the course of that past week I’ve probably checked out at least 10 different stores.  Nothing.  Nada.  Zip.  Zero.  Zilch. That’s all, just thought y’all should know 😉

Dinner last night was a big bowl with mac ‘n’ cheese and broccoli (which is at the bottom and lightly steamed):

I adore pepper on my mac ‘n’ cheese…it’s delicious, but even if it wasn’t I’d still put it on there because it reminds me of how my mom seemed to put pepper on just about anything growing up:  mac ‘n’ cheese, tomatoes, cucumbers, cantaloupe.  It adds just the right amount of heat to make the flavors all tie together!  Today is the standard Friday work day, and then tonight I’m planning on some major house cleaning and movie watching 🙂

MARRIAGE REF FRIDAY

The other night when we had our grilled corn, Nate and I found ourselves in the middle of yet another silly debate:  how do you eat corn off of the cob?  I claim side-to-side…you know, just like they did in cartoons!  It takes less work and always yields the highest number of kernels.  Nate on the other hand is saying that you eat the corn around the cob.  His reasoning?  “It’s more efficient that way.”  Doubtful baby, doubtful 😉


So, what do you think?  And more importantly, what do you think THIS guy would have to say about it?! 🙂

    I eat my corn around the cob. Well I used to at least. With these braces I have to slice off the corn with a knife. haha. Let me tell you, I am the queen of maxi dresses. I own maybe 10 or more. But I do live in Florida, so I’m sure there is better variety down here. I’ve gotten quite a few from forever 21. And they are long enough on me too. I’m almost 5’8 and I can wear heels or flats with the dress. Hope you find one you love!

    I always go around the cob but Len does side to side like a corn eating machine. We have had that same debate. haha. He swears he has won a corn eating contest.

    My Mom would put pepper on everything when I was younger as well. I remember watching her eat tomatoes with A little Mayo and tones of Pepper. Now when I eat Mac and Cheese I put Pepper on it and think of her.

    I have yet to find a maxi dress that doesn’t make me look 6 months pregnant. Or maybe it’s my nightly dessert habit that’s doing it to me, but whatever.

    OMG, 505 Green Chile sauce has my heart!! Do they sell it in CO?!! You have no idea how happy that would make this NM-raised girl…. 😉

    I also love pepper on my Mac’n’Cheese. Not sure when I started putting it on there, but mmm its so good.

    Ew. That guy looks gross with all that corn. I think I have been convinced to try one of Jessica’s recipes with that sweet and salty combo.

    I don’t think Diet Coke is going to kill you if you have one every once in a while. That was the last real vice I cut out of my diet, but when I really want one, I have one. I’m pretty sure 2 or 3 x a month is not going to really have a negative effect on my health.

    Haha! What a debate. I eat mine around the ear like your hubs. I don’t really know why though.

    I also want to weigh in on the maxi-dress and the mac n cheese.

    I’ll be honest, I dislike maxi-dresses so I don’t think you should be sad. Haha. I think it’s hard to find one that works unless you’re 7′ tall. I’m sure it’s out there… somewhere. But to each her own. I do NOT claim a fashionista title, so don’t listen to a word I say 😉 (Even more so, I hate those super short dresses that are everywhere right now. I don’t like walking around with my va-jay-jay hanging out thank.you.very.much.)

    I love black pepper and tobasco on my mac n cheese. Try it! Love that kick!

    I eat it side to side, thats the only way to go. Efficiency has nothing to do with how you eat corn, sorry Nate 🙂 haha

    I am now inspired to go get some shells n’ cheese for my next cheat day hahaha…mmmmmm, I’m salivating just thinking about it
