Happy Friday everyone! So glad the weekend is finally almost here 🙂  It’s been kind of a hectic morning, so let’s just jump right in, shall we?

Last night was full of great food and fairly productive too!  I started off with a POM cocktail:

I just kind of dumped everything over ice, but it’s about 1 oz of rum, 1/2 cup of POM juice, 1/2 cup of club soda, and a squeeze of lime!  Super refreshing, and it reminded me of being in the Caribbean 🙂

Dinner was salmon and squash quesadillas with avocado cream:

Mmmmmmmm, just look at that melty cheese!  I just grilled some salmon (brush with olive oil and a bit of salt, grill for 2-3 minutes on each side, then cover with foil for 10 minutes.  Break apart with a fork), roasted some zucchini and yellow squash (1 tsp olive oil, sprinkle with salt and pepper, roast for 5 minutes on 400, then broil for 3-5 minutes until browned), and quickly “caramelized” some onions (slice an onion, add about 1/2 cup water, boil for 3-5 minutes, then add 1 Tbsp of sugar and a dash of chili powder.  Cook until onions are caramelized and all liquid is gone).  Once all that was done I coated a pan in non-stick spray, and layered a little cheese, the salmon, the squash, the onions, and a little more cheese.  Cook on medium-low heat until browned on both sides and cheese is melted!

The avocado cream recipe can be found on this post (scroll down a couple recipes) – it’s one that I made a LOOOOOOOONG time ago and loved!  I worked on the articles I mentioned yesterday and then when Nate got home we watched The Office and 30 Rock and then hit the sack.  We’re very exciting 🙂

This morning I woke up, got ready for work, and made a chocolate peanut butter GM (finally!  I’ve been craving this for so long):

It was just as good as I remembered!  I also stopped and got some free coffee from a local shop that was having customer appreciation day 🙂

Great way to start out a Friday morning!

Marriage Ref Friday

I guess it’s a good thing that Nate and I don’t really argue about a lot of things, but I’m starting to run out of Marriage Ref ideas!  AH!  I did get one from a reader though, so we’ll vote on that 🙂  If one person needs to wash some of their clothes, is it OK if they do a load of laundry with JUST their stuff, or should they wash some of their partner’s clothing too? Vote by leaving a comment and we’ll tally up the votes to get a winner by 5pm Mountain Time today!

    I love doing laundry but sometimes my boyfriend does it and usually only puts HIS clothes in. GRRR! not fair 😀 whoever is doing laundry sound wash also his/her partners clothes!

    I wish we had POM in Finland, it looks soooo goood!

    I fall into Lara’s category: We always do all of our laundry together and I usually take the lead because I have so many things that need to “line dry.” And, like Samantha, I just don’t feel ok about not doing a full load of laundry (unless it’s unavoidable like whites for some reason).

    I say wash them together! I do all the laundry here anyway since things have been ruined too many times when my husband does the laundry. He probably does it on purpose! That cocktail looks so good!

    I do all the laundry–some things I wash together, some not. Jeans for example all washed separatley. Fiance is a farmer and his jeans/work clothes are filthy–I can’t bear to wash them with mine. And I don’t let him do the laundry because puts everything in the dryer!

    PS: The POM cocktail looks refreshing–i might have to have one-thankfully it is Friday!

    It really depends on the type of clothes going into the wash! If I’m washing delicates and hubby has a few soiled socks and sweaty workout clothes, I definitely DON’T put them together (would rather hand wash my stuff separately!). :-p If it’s similar clothes (both towels or sweaters…), why not? Saves energy and time. 🙂

    Rule number one in my household: HUSBAND DOES NOT TOUCH MY LAUNDRY. About six years ago, he washed a load of my laundry, and shrunk about five of my favorite things. So now he knows not to wash anything of mine… I handle it myself since I know what needs to line dry and what can go in the dryer.
    My husband also dry cleans all of his work clothes, so any loads of laundry he is doing are loads of workout clothes or lounge clothes. Whereas mine are a mix of workout/lounge clothes AND nice clothes, which need more care.
    Perhaps hubby ruined my clothes on purpose so that I would ban him from laundry for life? LOL!

    Re: Laundry. I always try to do his when I do mine, but request that he not do mine when he does his own! I have too many specifics that it would just be a pain to explain it 😉

    caramalized Oninions! i would be perfectly happy stuck on a desert island with some of those 🙂 and some peanut butter…not eaten together though! 😉

    Is that tequila behind your quesadillas?

    My husband better no being doing just his laundry! He knows better 🙂 I’ve even trained him well enough to know which clothes need to go in the cycle 🙂 Although I will say that I tend to be the one that puts everything in the wash. He helps fold though.

    Quesadillas look wonderful! I will definitely be trying the avocado cream sauce soon.

    I have specifically asked that my hubby not to throw my laundry in with his. He has a tendency to throw my delicates and lululemon in with whatever he’s washing and I’ve lost some spendy stuff that way. I will do his laundry when I do mine.

    I don’t think we have ever done our laundry together. He knows my clothes are so specific on how they need to be washed and that I would freak out if he put a pair of jeans in the dryer that couldn’t go into the dryer etc. If I see his dirty socks or workout clothes laying around I will add it to my stuff but we have always just done our own laundry. We have completely different schedules and its best if he makes sure his uniform is washed and ready since he is always on call.

    You are so cute that you don’t have marriage ref ideas…I could give you loads of ideas.hahaha.

    I think its nice to do some of the other persons’ if you don’t have a full load – I know I certainly do that but it doesn’t normally get reciprocated. That said, I’d probably be pretty mad if he did the laundry wrong and shrunk some of my stuff so maybe its better this way! 🙂

    Separate. My boyfriend gets a lot of grease & chemicals on his clothes, and doesn’t mind possibly transferring it to the rest of his clothes in the wash. I, however, am not a fan! Plus he is out of town Mon-Fri so he does laundry on the weekend and I do it Wednesday night.

    I do all the laundry so this doesn’t apply to my marriage I guess.

    If my husband needs something washed I’ll do it for him and I make sure it’s a full load. I love spoiling him like that 😀 It’s the least I can do since he works so hard for us.

    That quesadilla is so creative. It sounds delicious. Although I would opt for chicken instead of salmon. I’m not a huge salmon fan…unless, of course, it is sushi. 😀

    Today’s marriage ref cracks me up. Peter never does laundry. So, yea…if I have to wash my clothes his are getting done too. And Makenzie’s.

    Ken and I do our own laundry. I used to do it all together, but when we got our front loaders-he was so excited and started doing his own! I am okay with that 😉

    Hmmmm…I think that if the other person isn’t there, they should go ahead and just do their laundry. But, if the spouse is in the house, it’s always nice to ask if they have anything they want thrown in as well.

    That cocktail is calling my name…at 11 am, lol 🙂

    Whoever starts their laundry in my house usually starts the other person’s laundry too. It only takes a few minutes and it’s appreciated. 🙂

    I do all the laundry. Not always by choice. 🙂 When he does happen to throw in a load of laundry, it almost always is just his clothes. It frustrates me but I don’t complain because at least he is doing some of it.

    We have laundry day! We do it every Saturday and we wash our clothes together. So usually throughout the day we will both take turns folding and such…what can I say…laundry has never been an issue with us!

    Of course, I say that, but really I think my husband would prefer if I just left his things alone. He has an incredibly complicated (no, really, it’s impossible to learn) system of folding his clothes so when I fold his laundry, he just refolds it!

    Usually all the wash goes in together, and then we do the folding at the same time, but we each fold our own things.

    I bet you’re going to get a ton of different responses with different systems — who knew people had such different ways to do the same simple thing??

    I love this! I do mostly all of the laundry. I have so many clothes that are “hand washable” lay flat to dry”

    He doesn’t read the labels and just throws everything in with cold water, washes and dries it. Therefore ruining a lot of my clothes.

    Why on earth would you do a half load of laundry? You save energy by doing all the laundry at once and it doesn’t take any more work!
    If you only need a few items then just iron those that you need out of the dryer.

    My husband and I split the laundry chores. I put them into the washer, the dryer, hang what needs to be hung dry, he folds and we each put away our own things. In the event that only one of us is on laundry duty, we don’t just wash our own things. We are in this thing together!

    Hahaha… this is funny. All I can remember growing up is my mom did all the wash. Well, my husband lived on his own for 10 yrs before us getting married, so he always did it. I think it’s fine if we occasionally throw things in together, but we rarely do – its just our schedules. If I stayed home, I would probably definitely do most of the laundry, including his.

    He also takes all of his dress shirts to the dry cleaners, because I don’t IRON!

Working on my #avoquados y’all! This protein smo Working on my #avoquados y’all! This protein smoothie has 40 grams of protein, lots of green goodness and tastes like a pineapple-vanilla dream!

- 1 cup water
- 1 cup frozen pineapple
- 1 cup frozen kale or spinach
- 1 scoop vanilla protein
- 1 serving collagen peptides (I use 2 scoops of @bulletproof brand; some brands just have one big scoop)
- 1 scoop greens powder (I used @amazinggrass)

Blend and enjoy!
🥗 FAST FOOD! Real real: I hate when people are 🥗 FAST FOOD!

Real real: I hate when people are all, “you can cook food in the same time it takes to grab takeout.” That is not always true, and sometimes it’s just about not wanting to try. Effort is hard, amen?!

Today I’m thankful to have had the energy and want-to to cook something a little healthier and save a little money. That’s not always the case, but today it was and I’ll count it as a win!

In the bowl: 3/4 cup black beans, 1/4 cup corn, 2 big handfuls of spinach, and two eggs. Seasoned it all with salt, pepper, garlic and smoked paprika!

Chocolate Peanut Butter Protein Oats! (AKA the thi Chocolate Peanut Butter Protein Oats! (AKA the thing I’ve been eating on repeat all week):

- 1/2 cup old fashioned rolled oats
- 1/2 cup water
- 1/2 cup milk of choice
- 2 tablespoons brewed coffee (optional)*
- 2 tablespoons powdered peanut butter
- 1 tablespoon cocoa powder
- 1 tablespoon ground flax seeds
- 1 serving unflavored collagen peptides
- Sweetener of choice
- 1 tablespoon chocolate chips

Heat the oats, water, milk and coffee in a small saucepan over medium heat. Cook until thickened to your liking (although keep in kind the flax seeds and cooling will thicken it even further). Remove from the heat and stir in the remaining ingredients except the chocolate chips; I like to use a whisk to make sure the collagen doesn’t clump. Pour in a bowl, sprinkle with the chocolate chips and enjoy!

*I love to add a little coffee to mine to help enhance the chocolate flavor, but you do you!

Mentioned this yesterday in the ol’ stories, but Mentioned this yesterday in the ol’ stories, but thought it was worth sharing here too. When it comes to how I plan out meals, I look for 3 things:

🥗Whole foods. Not like the store (that’s called Whole Paycheck, right?), but meaning foods that haven’t been minimally processed. Fresh veggies, lean protein sources, whole grains, etc. I do have a few processed things on hand (protein bars) just in case I’m in a place where I need something SUPER quick, but that’s it. 

🥗High fiber. There are so many reasons we should be getting in plenty of fiber (Google is your friend here guys), but if I’m being honest I just feel better when I’m getting plenty of it. Leaner, more regular, more satiated. The list goes on! Besides the obvious fresh produce, I also eat plenty of legumes, whole grains (rolled oats, farro, quinoa - even though it’s a seed), flax and chia seeds.

🥗Hit my protein goals. Again, an essential nutrient. I have composition goals, and for my muscles to recover from my hard workouts I have to make sure I’m getting in enough protein. For me this means chicken, fish, and the occasional beef or pork.
