Happy rainy Thursday everyone! It might not be raining where you are, but let’s just pretend, right Mama Pea? 😉 Today I had 2 pictures I couldn’t decide between for the two things I ate, so I loaded it up for y’all double time!
So this morning I made chocolate chip cookie bars for my office. I always make some sort of treat once a week for the people I work with because I think it’s fun to give stuff like that, bake, and the great news is that I don’t have to eat it all!
And, you know, in case you didn’t see them the first time, here they are again…in their CLOSEUP!
2 1/2 cups flour
- 1 cup butter, softened
- 2/3 cup brown sugar
- 2/3 cup granulated sugar
- 2 eggs
- 1 tsp salt
- 1 tsp baking soda
- 2-3 tsp vanilla (I love me some vanilla!!!)
- 1 bag chocolate chips
Preheat the oven to 375. Line a 12 x 17 inch jelly roll pan with parchment paper. In a bowl combine the flour, salt, and baking soda. In another bowl beat together the butter and sugars. Add the eggs and vanilla, and mix until well combined. Add the dry ingredients a little at a time. Fold in the chocolate chips. Spread on the pan and bake for 15-20 minutes, until the center does not jiggle when the pan shakes. And now, my friend, you have made chocolate chip cookie bars!
Lunch was a big salad, fiesta style!
I loaded up a head of chopped romaine with a huge handful of baby carrots, caramelized onions, grilled chicken, Spanish rice, a dollop of sour cream, and a MOUND of salsa:
I really love salsa on salads…I don’t ever want salad dressing as long as there’s some sort of salsa on there! The flavors imparted by the salsa are just so fresh and amazing…mmmmmmmmmm 🙂
Tonight is going to be filled with projects! I’m working on a little series that’s close to my heart, and if I don’t set some time aside to DO it, there’s no way it’s going to get done! I’m hoping to have a post every Monday on this topic, and I’m hoping to start next week! No promises, but I’m going to do what I can. Other than that there is going to be some working out and sleeping involved (must.get.some.rest)!

Even though I’m far far from starting a family, I have a secret love of pregnancy/baby blogs (don’t tell John 😉 (but really, not wanting or trying to get preg now lol). That Wife, as someone mentioned above is AMAZING, and OMG I’m a Mom is hilarious.
I have a hard time pulling big cookies out of the oven at the right time/getting them to cook evenly. yours look so great!

Hey that’s almost the exact same recipe as the regular chocolate chip cookies I made last night. I could’ve just smooshed them in a pan and made them bars. That’s super cool to know. Sometimes I get lazy and don’t want to make all those little balls of dough.
