Granola, like most things oat-related, is either hit or miss for me. Oatmeal itself has to be loaded with lots of other yummy goodness or else I freak over the texture. Oatmeal cookies must be crisp on the bottom or else I just can’t eat them. And granola has to be SUPER delicious or else it’s just not happening.
I like my granola to be sweet, but not dessert-sweet, with lots of flavor but not a long laundry list of ingredients. It has to be chock full of nuts because they’re the best, honestly, and not a lot of fruit.
And the oats – they have to be perfectly toasty and crisp. I mean, it’s just got to happen that way or else I will find something else. And for someone who’s not particularly picky about pretty much anything (I mean, just check out this post from Facebook yesterday – you’ll see what I mean) then it’s really saying something that I am in LOVE with this super crispy and super flavorful granola!
I made this granola using I Can’t Believe It’s Not Butter® Deliciously Simple™ and I have to say I’m really impressed with the versatility of the product. I usually just get plain ol’ butter at the store because it’s what I typically use in my baking, but Nate is always harping on me to get something that’s more easily spreadable. When I got the chance to try out I Can’t Believe It’s Not Butter® Deliciously Simple™ I jumped at it – you know, for the chance to try a new product but also a chance to improve our marriage 🙂
Besides the fact that I Can’t Believe It’s Not Butter® Deliciously Simple™ worked great in this granola recipe, it’s fantastic for our Saturday morning pancake breakfasts, spreading on toast bread or hot muffins, or making grilled cheese sandwiches. And with 100% taste and 0% preservatives I can feel like I’m eating something good for me too; it’s made with things like non-fat yogurt and vegetable oil – pronounceable and totally yummy.
I hope you guys give this product a try; it really is something that is a great fit for our family’s wants and needs food-wise, and the flavor is delicious. And besides, who couldn’t use a little more granola goodness in their life?!
Maple-Sweetened Nutty Granola || HeathersDish.com
Ingredients
- 2 cups old-fashioned rolled oats
- 1/3 cup raw pepitas
- 1/3 cup sliced almonds
- 1/3 cup chopped walnuts
- 1/4 cup I Can’t Believe It’s Not Butter® Deliciously Simple™, melted
- 1/4 cup pure maple syrup
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
Instructions
- Whisk together the I Can’t Believe It’s Not Butter® Deliciously Simple™ and maple syrup with the salt and cinnamon.
- Add the remaining ingredients and stir to combine, making sure that every dry ingredient is coated in the wet mixture.
- Spread into an even layer on a baking sheet.
- Bake at 325 for 35-40 minutes, stirring every 10 minutes, until desired color and crispness is reached.
- Allow to cool completely before serving or storing in an airtight container.
