In Dire Need

Afternoon guys!  Hope you guys are having a wonderful Monday so far!  Just remember, it means there’s only 4 more days til the weekend instead of 5 now 😉

Today’s eats have been pretty interesting as I still haven’t gone to the grocery store (on the to-do list for tonight)!  We are in severe, dire need for some fresh fruit and veggies in our house! First up, some peanut M&Ms because, well, you know, it’s the day after Easter!

Besides, a small handful doesn’t hurt, right?  Right!  Let’s keep on rollin’…lunch was a plate ‘o’ meat!

That’s 2 smoked ribs and 2 smoke chicken wings.  Like I said, Nate spent some time smoking some meat over the weekend, and we’re using it for lunches up here at work!  Once I get the store that meat should be accompanied by a big salad, but today I settled on this orange in it’s stead:

Definitely one of the best oranges ever, although I could not get it to peel for the life of me!  I finally just cut it into wedges and went to town on those.  Lunch was a VERY messy ordeal seeing as how the meat and bbq sauce managed to make it all over my face and hands, and the juicy orange dripped everywhere while I was eating it.  Let’s just say that a good scrubbing of my desk area ensued after I was done eating 🙂

I went on a walk instead of a run/walk today, and everything was fine until I had only 20 minutes left to go.  At that point my knee started hurting again!  Tonight I’m going to be researching doctors in the area and making an appointment ASAP.  There’s no way this is normal, and I’ve done everything I can think of to keep it from hurting!  When I got back I drowned my sorrows in a bowl of 100-calorie popcorn with seasoned salt and a large bottle of water:

I’m not a huge popcorn fan, but sometimes it just hits the spot as a salty snack, so I make sure to keep a couple of the plain 100-calorie packs in my desk at work.  I can’t eat it plain, but at the very least I always add pepper for extra FLAVAH!  Tonight’s dinner is going to be vegetable fried brown rice (and some chicken), so I wanted to make sure that I have an appetite for that 🙂

I can’t remember who asked this today, but what are some pantry staples that you have?  OR what are some go-to dishes you can make in a snap from stuff that’s in the pantry?  I’m always looking for new ideas of things that are easy to keep on hand to make quick and flavorful dishes! I always have canned beans, crushed tomatoes, pasta, rice, and plenty of spices, but I just got another great idea from RhodeyGirlTests:  sundried tomatoes!

    My fridge is usually pretty well stocked. I can’t go but a few days without hitting up a grocery store. 🙂 But between my freezer and pantry, I can make some pretty amazing meal. I usually have lots of frozen veggies. So stir fry or pasta with veggies is usually an easy fix. I also usually have frozen shrimp to add some protein. Since I live by myself, when I make large batches of things such as soup or casseroles, I will freeze them in individual packages so I can pull them out and use them later because eating the same soup for a whole week can get boring!

    I have the peanut m&ms too and I just keep eating and eating them. I forgot how addicting m&ms are!

    Ugh – so sorry your knee is still giving you trouble! 🙁

    I’ve found that when I’m in a pinch, I usually have on hand the staple ingredients for some kind of tacos or taco salad – beans, salsa, lots of fresh veggies, wholegrain wraps or tortilla chips, and you’re good to go!

    I always have diced tomatoes, beans, and veggie stock for anytime I am in a hurry, don’t have much money so I throw together a veggie chilli…always amazing

    We always have fish in the freezer (salmon, halibut, shrimp, tilapia) and that makes a really fast and easy dinner.

    My go to meal is normally and omelet with loads of veggies. In fact, that is what we had for dinner last night. I am also a big pan of brown rice pasta tossed with garlic, olive oil, anchovies and a load of veggies. Parmesan cheese is a nice addition if you eat dairy.

    I always have several kinds of beans, tuna, bread, eggs.. there are more things but those are the ones ALWAYS in stock. 😛

    I always have beans, rice, nut butters, crackers, and some frozen veggies. I’m sorry to hear you are still struggling with your knee. I have definitely been there and done that and two knee surgeries later I am pounding the pavement! It will be great for you to get some “real” answers!

    I always keep canned tomatoes, dry beans, wheat pasta or rice, and jars of pickled veggies and roasted red peppers on hand. Combined with frozen veggies, these ingredients make great stir fries, chilis, or soups.

    I know how you feel about the knee issue. Mine keeps hurting and I have backed way off of my running. As far as a pantry staple, I always have whole wheat wraps available. You can make endless meals with them! Veggie wraps, egg wraps, chicken wraps, tuna wraps, and my fav is leaving it flat and putting some tomato sauce and mozzarella cheese and whatever else toppings. Pop it in the oven at 400 degrees for 8 min. and it’s a crispy pizza for one.

    I definitely always have canned beans and rice on hand. I could eat black beans + brown for days! 😛 Some other staples are nuts, nut butters, veggie burgers, and frozen bread/wraps. So in a pinch I can always make a veggie burger or a peanut butter sandwich!
