Get Grillin’!

If you guys know me at, which at this point you should, you know that I’m from Texas and you should know that I LOVE to grill (even though I’ve always called it BBQ’ing even if there’s no BBQ sauce).  It’s just kind of what you do to get out of the house and enjoy the summer where I come from!  When I saw that Marla and Dara are hosting a summer grilling series, I was more than stoked.  Here’s one of my absolute favorite appetizers to make with perfect summer tomatoes and grilled bread!

SIMPLE SUMMER BRUSCHETTA

  • 3 bunches of tomatoes on the vine, seeded and chopped
  • 1/2 cup basil in a chiffonade
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp red pepper flakes
  • 1 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 1/2 cup fresh grated parmesan

This is one of the easiest and easiest dishes ever.  Mix the tomatoes, basil, garlic, salt, peppers, and olive oil together.  When you’re about to serve it stir in the vinegar and parmesan.  I find this keeps the tomatoes from being dissolved by the vinegar.  With the bread, buy a baguette that you love, slice it in rounds that are about 1/4-1/2 inch in thickness.  Brush lightly with olive oil and grill on medium heat for about 2-3 minutes per side (you want to get good grill marks!).  Serve warm or at room temperature with the bruschetta and you’ve got a killer summer appetizer!

    My mouth is watering! When I’m cooking, there are some days when I feel like a challenge and nothing appeals to me more than finding unique ingredients and whipping up something totally different. But, there are many MORE days when I just want a simple, clean recipe like this one with ingredients I know are already waiting for me in my cupboard. I’ve got to make this soon, thanks for sharing! :).

    love bruschetta. It kinda bothers me when people get all crazy and add weird things to it. In my opinon it should highlight the tomatoes and they should be the main ingredient. I like that you stayed true to the original 🙂
