So wow, I can’t believe that I haven’t had a “real” post since Friday night! I would say we have some catching up to do 🙂 This weekend was very lazy and unproductive, and Friday night was no exception! Nate ended up leaving work a little early, so by the time I got home he was fast asleep on the couch. Poor guy was exhausted! We decided to eat out that night. Here are some hints:
Any ideas? No? I think these next 2 hints might help 🙂
MEXICAN FOOOOOOOOOOOOOOD!!! I’ll be honest, in my opinion Colorado doesn’t have a lot of really great Mexican (i.e. Tex-Mex) restaurants, but I do love Tres Margaritas! It’s simple, cheap, delicious, and LEGIT Tex-Mex. We had chips and salsa (duh) and then I ordered the Champignon Burrito:
It had sauteed mushrooms, spinach, black beans, rice, cheese, and was topped with a tomato-based enchilada sauce and salad. YUM! I was so hungry that I ate the whole thing, and then was stuffed. We got home, sat down to watch a movie, and immediately fell asleep at, oh, 7pm. We are uber cool 🙂
Saturday morning I woke up and made some truly decadent French toast for Nate. He mentioned on Friday that he would love French toast on Saturday, so I decided to make that happen! Behold the greatest French toast in the world:
It’s actual French bread dipped in a custard of:
- 4 eggs
- 1/2 cup heavy cream (that’s right)
- 1/2 tsp cinnamon
- 1 Tbsp sugar
Whisk it all together, dip the bread, and cook about 3-5 minutes on each side over medium-low heat with 1 Tbsp of butter. Nate’s had strawberries on the side with butter and syrup, but I cut up some strawberries and topped mine with those.
SO incredibly good! We decided to take the dogs to the dog park after that, and we were planning on doing the full 5-mile loop, but the wind was so strong that we decided to turn back after about 20 minutes. We couldn’t hear one another, and the dogs couldn’t hear us either, so we figured it was safer to leave and try again another day. Bunker, however, decided that going for a swim sounded like a good option, so he darted to the water. Keira followed (she’s never gone swimming before) and before we knew it they were both sprinting around and through the water. They smelled gross, so when we got back they both got baths. YUCK! The rest of the afternoon was spent on the couch. Literally. The entire afternoon. On TV I watched:
- All 3 Food Revolution shows that I DVRed and never saw;
- Father of the Bride;
- My wedding video;
- Father of the Bride 2;
- 2 Barefoot Contessa episodes I recorded.
Yikes! I told you, lazy weekend. I didn’t even eat lunch! Nate decided to take some time and smoke some chicken wings, ribs, and cheddar cheese while I watched my girly movies, and then we ordered pizza for dinner. My half had mushrooms and red onions!
‘Twas delicious. We spent some time in the hot tub, then settled down for the night by watching the first Lord of the Rings movie. I can’t tell you how excited I was to watch that movie! LOTR is one of my favorite movies of all time! Sunday we got up and went to church, and stopped by McDonald’s for breakfast because our first choice wasn’t open. I had a Sausage McMuffin (no picture since we were driving) and some coffee. Sausage never tasted so good! At church I also had some miniature pigs-in-a-blanket that my friend Amy made. Again, so good. I really missed eating meat! After church we went over to Peter and Diedre’s house for lunch. We started off with the only acceptable Easter appetizer:
Peanut butter eggs anyone? Yes please! I had 2 and a glass of water while this bad johnnie was resting:
Prime rib = heaven. And baked potatoes:
My salad was amazing (went back for seconds!)
And so was my plate of prime rib, au jus, and a baked potato with some sour cream, salt, and pepper:
We ended with some apple pie and vanilla bean ice cream!
Talk about stuffed! We watched some funny YouTube clips (like this, this, and this) and then headed home to relax. I got to talk to my parents for an hour on the phone (I miss them so much!) and then started making dinner and simultaneously cleaning up the kitchen. My own Easter menu was cornish hens with Italian sausage stuffing and a big spinach salad with cherry balsamic vinaigrette!
I used Ina Garten’s recipe to roast the hens (found here), and stuffed it with a simple Italian sausage stuffing:
- 1 8×8 pan of cornbread (I used Jiffy brand)
- 4 oz Italian sausage
- 1/2 of a large shallot, chopped
- 1/2-3/4 cup of water
- 1 tsp sage
- 1 tsp thyme
- salt and pepper to taste
Brown the sausage, then add the shallot and cook for another 2-3 minutes. Meanwhile, crumble the cornbread into a large bowl, then add the sausage mixture. Add the spices and 1/2 cup of water. Done! Just make sure you add enough water to reach your desired consistency of stuffing, but I found that about 1/2 cup was good for me. While the hens were roasting, I threw together a salad of spinach, strawberries, and orange sections. Topped with cherry balsamic vinaigrette!
- 2 Tbsp cherry preserves
- 2 Tbsp balsamic vinegar
- 1 Tbsp red wine vinager
- 1 Tbsp sugar
- 1 tsp garlic powder
- salt and pepper
- 1/4 cup vegetable oil
Mix everything together (except the oil), then slowly whisk the oil in until it is all incorporated. Voila! I’m definitely going to use this recipe a LOT this summer 🙂 We ate until we were full and then settled again on the couch for some quality TV time. Guess what was on? LORD OF THE RINGS RETURN OF THE KING!!! So yes, I believe “geeking out” was a good phrase to use for me. I have a dream of getting all 3 movies and watching them in a row. I know that probably doesn’t sound that cool, but when you live with a husband who really hates movies like the LOTR trilogy, it IS a big deal 🙂 One day guys, one day…
This morning I got up, did some yoga, and then make a “purple slurple” that has been on my mind since I saw Ashley’s post the other day! In action:
This has 1 cup of nonfat milk, 1/4 cup lowfat plain yogurt, 1 cup frozen blueberries, a handful of ice cubes, 2 cups fresh spinach, and 1 banana. It made a LOT, but I drank it all anyway!
After the indulgent weekend I had, this was exactly what I needed to get myself ready for the day! That and a nice tall glass of iced coffee 🙂
Aaaaaaah. Feels good to have something healthy in my system again. I’m also going to be really lame and say that the lazy weekend is due in major part to the wind on Saturday. I mean, I would have been out and about, but that wind was so hard to deal with and gave me a pretty major headache too! I have some big plans this week though to start researching and working on my book proposal and working out hard with strength training! I’ll be sure to update the workout page as well, but I am just excited to start moving again. The couch is nice, but having energy is nicer!
Also, a quick note on me eating meat again: as much as I enjoyed learning new recipes for meatless meals, I do really enjoy all types of meat. However, if there’s one thing that Lent taught me, it’s that I don’t have to have meat in every meal. I’ve decided that while I will be eating red meat, poultry, pork, and seafood, I want to make the focus of my meals fresh veggies and then have much more seafood than any other type of meat. Not only is this a healthier way to eat, I think that I’ll really enjoy continuing to find new ways to incorporate veggies into my diet!

FYI!
There used to be an AMAZING mexican resturant up in Dacono. Take 25 north and turn right at the Dacono exit and there in a little strip mall was the best little Mexican resturant and dance club. Man o Man I miss that place!
