Happy Memorial Day! It’s not with lightheartedness that I look at the meaning of this holiday – I am grateful beyond words for the sacrifices made by the men and women in our military who have laid down their lives for us. For me. A total stranger, and still they fought (fight) for me. For us.
To all of you, thank you, so deeply and from the very bottom of my heart!
One of the coolest parts of my job is the fact that I get to work with Great Day Farms and create fun, yummy recipes using eggs and share them with you guys. We go through an insane number of eggs in our house, from just scrambled to thickening ice cream. They are a huge source of protein in our diet, and if you follow me on Instagram you’ll probably notice that at least half of my meals are leftovers with an egg on top. Really. And I always hashtag it #ifyoulikeitthenyoushouldputaneggonit. Because I’m super cool 🙂
In all the ways I love my eggs, though, this is a new favorite for me. Perfect toast, salty Parmesan, and herbs. It really doesn’t get much better than that, you know!
I recommend getting a really great loaf of bread from a good bakery for the bread part. I used a really great loaf from H-E-B because I was making this in Austin last week, but I’ve been making this bread from Ina Garten lately and it is delicious too. Just pick your favorite! And a fresh piece of Parmesan will be your best friend here too – use a microplane grater to get perfect little flecks of salty goodness melted on top!
