Oh my word y’all, I am D R E A M I N G big time of summer these days. And by these days I mean the past week where I’ve only left the house a handful of times thanks to the crazy ice storm that has swept through the South. I’m so very thankful that we haven’t lost power, but living in the hills of Arkansas makes for some interesting travel options when ice comes around.
Plus I’ve started my seeds for our garden this year and I keep staring at them every day waiting til the moment I can get the garden going. It’s going to be great! And – spoiler alert – I may be growing flowers this year. WHOA. Get ready!
In the meantime we are trying our best to eat the freshest food we can find in grain-heavy winter winter salads with root veggies and soaking up the sun when we can, and this champagne shallot vinaigrette is my go-to dressing. It goes with just about anything (maybe not Asian salads) and lends such a sophisticated flavor.
