As we all heard and saw in Wes's 12-week update post traveling with him was not as easy as we thought. Turns out our little nugget isn't cut out for life on the road just yet and therefore cried a LOT, hardly slept and required constant attention from us during the driving portions of the trip. Not that we minded giving it, but road trips aren't as much fun from the backseat with a screaming baby. Just sayin'. Good thing hot fresh apple fritters are always good to soothe ... continue reading...
Blog Love: Meeker’s Favorite Chocolate Chip Cookies
You guys know that cookies are always a welcome addition to our weeknight dinner menu desserts, and that chocolate chip cookies reign supreme thanks to my husband's rabid obsession with them. Yes, rabid. Don't believe me? Come stay with us for a day or two - you'll find out. If you've been following the blog for a while you'll also know that it is quite the struggle to get good chocolate chip cookies to turn out at higher altitudes, and although I've figured out ways to make it work for me ... continue reading...
Chewy Coconut Granola Bars
One thing that I wanted to make sure of with our recent road trip is that we would have delicious and healthy snacks to take along. It's so easy for me to get sucked into convenience store food, and once I start a vacation eating poorly it pretty much means the rest of the trip will follow suit. This trip I made this incredible crack snack mix and then dove into the most recent issue of Cooking Light for some sweet inspiration. I decided to go for it with these Chewy Coconut Granola Bars, ... continue reading...
Chipotle Peach Barbeque Sauce
I did a bad, bad thing. I bought some gorgeous white peaches - the stuff of legends - and I left them in the fridge until they were but a day from rotting. What kind of food blogger am I?! Why didn't I just devour them in the first place? And who/what/when/where/why/how did I leave them in the fridge for crying out loud? I promise my mom taught me to leave them on the counter. I know this. But apparently a lapse in judgement is the bain of a new(ish) mom's ... continue reading...
Week 12: Baby’s First Vacation
OK so I know I'm super stealth and all and you guys hardly missed the fact that I, um, totally didn't post Wes's 12 week update on Friday. Right? See, we just returned yesterday from the Great Cross Country Road Trip Extravaganza of 2012. And by cross country I mean from Colorado to Texas, which if you're a geography buff (which clearly I am not) is not actually cross country. Regardless. Friday morning I was tired and had quite the bit of packing to do and so I figured the ... continue reading...
The Best BLT Ever
There is a woman that I work with who is probably the most fabulous person I know. Here's a list of reasons why: She churns her own butter. She has an oven that is the most awesome thing in the world, which she calls her baby. She owns a goat. Maybe for goat cheese one day, but mostly because it helps with the whole "mowing the yard" thing. She also owns an alpaca. She lives on a lake. She knows how to make croissants. Anyone who knows how to do that wins. She can wear ... continue reading...
Lemon Basil Chickpea Salad
Let's talk about summer today. Today I got my first mosquito bite of the summer since we're in Dallas and that's what happens in Dallas in the summer. I have been sweating nonstop since our arrival in the great state of Texas, which is fine because it's hot here and I prefer summer heat to winter cold. I have been craving salads, mainly because of this elixir of the gods, but also because salads really sound stinking fabulous when you're me and you sweat ... continue reading...
Fail-Proof Honey Mustard Salad Dressing
So I admit it: I haven't liked salads really until recently, and I'd be lying if I said the 'recently' part of that statement wasn't due to losing some of the baby weight. BUT I'll also admit that during pregnancy, when I was eating the same.thing.every.single.day, nothing sounded better to me than a big fat fresh salad. Now that it's salad season and our house is chock-full of lettuce and all things salad-y I have come to realize that I don't actually like salad again. Here's ... continue reading...
Road Trip Snacks to Rock Your Face
Here's the deal y'all: we're in Texas. T to the E to the X to the A to the S. And we drove here with our 2 1/2 month old. Crazy? Probably. It's only something I worried about for, you know, WEEKS and tried to think through every possible scenario in which Wes could freak out. And the solutions? Well, besides my boobs our only saving grace has been physically holding a pacifier in his mouth. Homeslice is stubborn! The one thing that I didn't worry about though was what ... continue reading...
Week 11: Full-Fledged Baby
It's official - I am the mommy of an 11-week-old full-fledged baby. I can hardly believe it! And like I said last week, I find myself loving mommyhood more and more every day. We have finally settled into a great little routine (and I know that by saying that I'm totally jinxing it...) and he's SLEEPING THROUGH THE NIGHT! Like a full 8-10 hours. I can hardly believe it, but I have to say I'm so thankful. I can handle the lack of sleep just fine, but I sure do love getting some ... continue reading...
Pineapple Coconut Pepper-Studded Rice and a Tropical Pineapple Hot Fudge Sundae
Last Friday I had a lifelong dream come true: ice cream. Delivered. Right to my doorstep. At 10am. I'm living the life, y'all. You don't even know! As part of the Foodbuzz Tastemaker Program I was lucky enough to get to try the Häagen-Dazs® Pineapple Coconut Ice Cream. OMG. OH. EM. GEE. Let me take this quick moment though to remind you guys not to let dry ice touch your skin. Oh, I wore gloves to get the ice ... continue reading...
Body After Baby: Part 4
Well here we are at almost 11 weeks postpartum and I feel like I'm just now starting to get in the swing of things in regards to a fitness routine. I am hoping that it just continues to get easier to fit in great workouts and still be able to do all of the things around the house and on the blog that I'd like to do, but one of the biggest takeaways from mommyhood is to cut myself some slack and have a little grace. I'm not going to have an incredibly flat bounce-a-quarter-off-of-it tummy for a ... continue reading...
