Zucchini. It’s what’s on everyone’s plate these days – not only is it in season, but it’s pretty much the most abundant thing ever. I remember growing up we would eat zucchini and summer squash for FOR-E-VER in the biggest variety of ways you could think of.
But this? Yeah, we never had it like this.
The moment I saw this recipe on Courtney’s blog I knew I had to try it. Creamy and cheesy and crunchy on top? Yes please!
Besides that, Courtney is just about the cutest thing ever and has fantastic taste. If she says something’s good, it’s good, and I’m not going to be the goober that questions it 🙂
I made the casserole exactly as directed, only I added a tiny pinch of nutmeg into the sauce and a little bit of parmesan cheese into the breadcrumb mixture. Just ’cause. We served ours alongside some grilled steak, and then I pretty much ate the rest of it all in one sitting.
Because it’s delicious.
