So yeah…as referenced in my Monday post I’m totally behind this week (and every day of every week). Shocker? I think not. But the reality is that I hate leaving you guys hanging without a good food post a couple times a week, so today I’m bringing out one from the ol’ archives.
I am always looking for a good slow cooker recipe that doesn’t taste like a slower cooker – does that make sense? Does anyone else ever feel like all slower cooker recipes start to taste the same after a while? Because I do, and while the solution might just be to get a new slow cooker today the solution is to make this amazing soup!
I love how easy this is to make and it feeds a huge crowd. A quick note though – if you’re planning leftovers you may want to cook the tortellini separately and then add it in as you serve it to keep the pasta from disintegrating overnight. Still super simple, and always yummy!
