Very Vanilla Pancakes with Creamy Orange-Scented Drizzle

When it comes to pancakes around our house I have to admit that my husband is quite the connoisseur.  He likes pancakes that are light, airy, a little crisp on the outside, and more importantly FULL of flavor.

Me?  Well, I guess that makes me a connoisseur as well then because I love all of those things too.  But I’m a little more adventurous on the flavor.  Ever since I discovered vanilla bean paste at HomeGoods I’ve dreamt of just about any and every reason to use it every day.  And let’s get serious:  pancakes are probably the most perfect use ever.   PLUS there’s a creamy syrup that my mom used to make as a drizzle for cakes that, well, takes the cake.  Vanilla + orange = dreamsicle love.

The vanilla flavor is amplified by the awesomeness that is Silk Pure Almond Unsweetened Vanilla, and I have to admit that I love the extra calcium and lower calorie count as well.  So heat up that griddle, y’all, and let’s get our pancakes on!

VERY VANILLA PANCAKES WITH CREAMY ORANGE-SCENTED DRIZZLE

For the pancakes:

  • 2 cups flour
  • 2 Tbsp brown sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 egg
  • 1-1/4 cup Silk Pure Almond Vanilla Unsweetened
  • 1 Tbsp vanilla bean paste

For the creamy orange-scented syrup

  • ¼ cup butter
  • ¼ cup granulated sugar
  • 1 Tbsp orange zest
  • ¼ cup Silk Pure Almond Vanilla Unsweetened
  • ½ Tbsp vanilla bean paste

For the pancakes, heat a griddle or a large pan over medium-low heat.  In a large bowl whisk together the brown sugar, egg, butter, Silk Pure Almond Vanilla Unsweetened and vanilla bean paste until smooth.  Sift in the flour, baking powder, baking soda, and salt and fold into the wet ingredients until just mixed.  Pour the batter by the ¼-cup full onto the heated griddle and cook for 2-3 minutes per side until golden brown.  Serve hot with the syrup, directions below.

For the syrup, melt the butter and sugar in a saucepan over medium heat.  Stir in the vanilla bean paste and Silk Pure Almond Vanilla Unsweetened, whisking until smooth.  Allow the mixture to come up to a bubble and simmer until the sugar has dissolved.  Remove from the heat and allow to sit for a few minutes before drizzling over prepared pancakes.

    I always bake with vanilla extract or vanilla bean and never use vanilla bean paste before…sounds delicious and intense. I would love to try these to explore more.

    Mmm! I love the orange and vanilla combo, too! I discovered that making pancakes with oj instead of milk makes for some deliciously sweet pancakes… I bet your glaze would take them over the top!

    wow…these look amazing!! And vanilla bean paste–I’ve seriously never seen that. I wonder if I can buy it online!? I would have so much fun with that.

      You can! I actually got mine at Home Goods/TJ Maxx and it’s the exact same brand (Nielson-Massey) they have Williams Sonoma. SO GOOD!
