In short, good mornin’! 🙂

Wow, I didn’t realize it but I’ll have to back all the way up to Friday!  First things first, THE TUCKERS WIN MARRIAGE REF FRIDAY!!!  I’m the tucker in our family, and Nate is the non-tucker…but we usually end up not tucking because we typically don’t make our bed.  Teehee 🙂  OK, onward to food!!!

Friday was a day of 2 breakfasts…first up for the real breakfast was a burrito lady burrito (spicy sausage) and salsa!  I kind of want to make these a Friday tradition because OH MY GOODNESS they’re good!  Spicy and yummy, and it reminds me of a good burrito place I went to growing up.  YUM!

I also had breakfast for lunch:  a Jimmy Dean turkey sausage bowl:

Plus a 1/2 cup of nonfat yogurt with sliced mango:

After work we had date night at PF Chang’s!  For some reason we don’t eat a lot of Asian food, and I don’t know why.  I think we typically crave Italian and Mexican and just go with our first instincts with those, but I do love the umami you get with Asian!

We started with lettuce wraps…I had this x 2.5:

I ordered the Sesame Chicken (I ate about 1/3 of the plate):

With a side of brown rice (which I ate all of because I LIKED it :)):

And Nate ordered the Orange Peel Beef:

We each ordered one of their mini desserts too!  I got the tiramisu (told you I craved Italian!) and Nate ordered the super-chocolate-with-raspberry one:It was such a fun night just hanging out with my sweet husband…we spend a LOT of time together but it’s not very often that we go out and just take the time to discuss something other than work and the photography business, so this was a special treat 🙂

Yesterday we got up and went to see Killers at the movie theater for half price (side note:  if you go to the movies on Saturday mornings the tickets are usually half price and there’s no crowd!).  It was pretty good!  Definitely not going to win any awards, but it was a really cute date movie.  Afterwards we went to Old Chicago with some friends from work to watch the World Cup match between the USA & England.  Honestly, I don’t really know much about soccer, but I had a blast watching the game!  I had 2 Breckenridge Vanilla Porters and a split some Italian nachos with Nate.  When the game was over we went home, where I did a ton of cleaning, laundry, and did a really great upper body workout.

Dinner was roasted veggies (zucchini, mushrooms, and peppers) with a little olive oil, salt, pepper, garlic powder, and a sprinkling of thyme.  YUM!

I also grilled a ton of chicken tenders.  I know this next photo might not look that appetizing to those of you who are vegetarian or vegan, but it was really good!  Plus I wanted to make a lot so that we could use the leftovers in another meal this week:

Plus some more toasted ravioli!  My plate had 2 tenders, half of the veggies, and 4 ravioli:

Dessert was amazing!  I just took some canned pineapple rings, sprinkled them with about 1 Tbsp of sugar (total, so only 1/4 Tbsp for each ring), and broiled for about 3-4 minutes.  In the meantime I toasted some coconut and scooped a 1/4 cup of vanilla ice cream.  When the rings are done, stack 2, top with the ice cream, and sprinkle with the coconut!

Super easy, and since the rings are smaller you don’t even notice that there’s not a TON of ice cream…there’s just enough to go with the pineapple and scoop up the rest of the toasted coconut at the end 🙂

Random question of the day:  What’s your ideal date night?  Dressed-up and on the town?  Snuggling on the couch and watching a movie? I have to say that as long as it’s with Nate then I don’t really care, but I am always a sucker for snuggling and movie time 🙂  It did feel really good to just get out Friday night and wear something a little nicer than my average work clothes!

    oh my gah i LOVE PF changs!! soo good! those lettuce wraps ROCK!! I try to re create them but its not NEARLY as good!!!
    My fav date night- great restaurant, froyo, and going to a park or something to walk around and chat!

    My favorite date night would lean toward ordering in Chinese food and watch a movie snuggling at home. Although the best day dates are something active like golf or hiking (bring a picnic) and take in nature. 🙂

    It sounds as though you have a healthy mix of both Heather…good for you!

    I thoroughly enjoy all kinds of dates – sometimes I’m in the mood for a nice restaurant, other times a hike is perfect, and other times I enjoy nothing more than cuddling in my pj’s! I can’t pick a favorite I guess! 🙂

    I went to PF Chang’s yesterday too! We got the lettuce wraps as an appetizer as well; love them. I wanted to try a mini dessert soo bad! And your broiled pineapple sounds amazing and looks so pretty 🙂

    i never eat chinese food when i’m out because my parents own a restaurant so i’d rather try other foods that aren’t always at my disposal. i have heard that pf changs is good though especially the lettuce wraps and those little desserts they have.

    i do like eating out with my bf though. the dining out experience in itself is always fun.

    I love going on hikes and bringing a picnic lunch for a date. My partner and I both love to check out the local mountains near us, and he loves when I pack up a lunch to eat on the trail. Definitely my favorite kind of date.

    Haha, my mom used to sing that song to us all the time when we were little! I’d say I’m 50/50 when it comes to my date nights. I love an excuse to get dressed up, but I’m usually ready to conk out by 10:30 so cuddling on the couch always sounds pretty good!

    I LOOOOVE PF Changs! I always leave in a food coma, but ya know it’s worth it 😉

    I love getting all dolled up for a fancy restaurant but I also love sitting home with a good bottle of wine and chatting. My favorite date was one time our power went out so we lit a bunch of candles and drank a bottle of wine and talked about everything under the sun 🙂

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

1️⃣ SMILE! Even if you don’t feel like it, smiling (even forcing it to the point of feeling weird) has actually been scientifically proven to improve mood, lower stress, and boost your immune system. I actually recommend doing it awkwardly around other people because it’ll make them smile too 😉

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
