Do you guys ever use the title for a post more than once? I thought I’d already used this one before, but according to my ‘Search’ option on my blog I haven’t. So we’re going to just roll with it!
How are y’all? After yesterday’s parade of free goodies and the happiness that was emitted from the office, it definitely feels like it should be Friday! Last night we took the dogs to the dog park and let them sprint for 30 minutes. They loved it! I really can’t wait til we get to do that more often this summer. In fact, this weekend we might take them swimming, which is the ultimate wear-your-dog-out activity. Fingers are crossed! Dinner last night was a little something I threw together that I shall call “Sweet and Spicy Ginger Noodles with Roasted Vegetables”:
On top you have your basic roasted veggies (olive oil, salt, and pepper and roasted at 400 for 20 minutes, stirring halfway through). But underneath is where the magic is. It’s al dente linguine coated with a simple and wonderful sauce:
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp vegetable oil
- 2 Tbsp brown sugar
- juice of 1 lime
- 2 cloves chopped garlic
- 1 tsp ginger
- salt and pepper to taste
- 1-2 tsp red pepper flakes
Bring all of that to a boil and let it reduce a little til it coats the back of a spoon. Then toss with the pasta and top with veggies. SO GOOD and super simple!
We watched some of Minute to Win It last night and y’all, that show stressed me out. I don’t think I could ever EVER go on that show…in fact, I think I’d rather do an Iron Chef battle than try to win that show. We also got to watch Modern Family, and then I spent some quality kitchen time making the same brownies with peanut butter frosting (from Jessica) for the guys in our warehouse (they’ve had a hard week) and then my lazy-girl twist on Jessica’s Stawberry-Lime Cupcakes: sugar cookie bars with lime buttercream and a strawberry swirl! Basic sugar cookie bar recipe can be found here, and then I did the buttercream with the lime zest mixed in. After the bars were cooled and frosted, I melted a little strawberry jam and swirled it on top. Such a great summery treat! Pictures will come this afternoon, but I had a great time baking 🙂
This morning I got up and did a 25-minute yoga session to stretch out my legs, and fueled for the morning with a Green(ish) Monster:
I’m still just amazed by how GOOD I feel after drinking these. Who knew that a smoothie with spinach could make you feel so refreshed?! I also enjoyed a glass of iced coffee:
Glorious! I’m pretty excited about today; it was supposed to be windy and rainy, but this morning the weather guy said that it was supposed to be sunny and warm! I really hope he’s right 🙂 I’m going to walk today, and maybe even tomorrow, since my knee was starting to get achy later on. I’m also thinking it could be a good thing to bring some frozen peas up to work to ice my knee when I’m done as well.
If you could be on any reality TV show or game show, what would it be? Do you think you would make it very far? I would probably do something like Who Wants to Be a Millionaire? – something with useless facts where I could really shine 🙂 I think that I would get pretty far, maybe even win a million dollars!!! – but I just don’t feel like going through the process to enter 🙂

I want to do the Amazing Race, but I would be terrible! I get so cranky when I don’t get enough rest/food…When I get a house I will totally want to be on one of the home improvement shows!

My husband’s obsession is iced coffee. haha. But funny thing is, I’ve never gotten into liking coffee hot or cold. Regardless it always looks delicious. Especially if you put whipped cream on top. 🙂

The only show I want to be on is Wheel Of Fortune! They actually invited me to a interview session this week, but it was in KC and of course i now live in Miami…BOO!!
