Y’all, yesterday was just A DAY. And I know I said that on Friday, really…yesterday was a DAY. After getting home from work I took some time and walked the dogs, then indulged in a glass of wine whilst cooking dinner.
And there might’ve been another glass just for good measure.
So after cooking dinner it was no surprise that I was dreaming of recipes to share with you guys…sugar and alcohol go perfectly together after a long day of needy emails. Sadly, I did not come up with the shortbread cookie recipe I used (it’s my America’s Test Kitchen cookbook recipe) but I DID come up with the perfect “frosting” for them!
First of all, the shortbread cookies are made with lime zest and coconut. I wish I was still here and am apparently going through withdrawals:
So first things first, I made the cookies. I have to say that I don’t feel 100% comfortable putting the recipe on here since there’s no way to link back to the recipe online…you’d have to go buy the cookbook for it. But like I said, I added the zest of 2 limes and 1/3 cup of coconut to the mix. You’ll thank me later.
But the glaze is what makes this taste like heaven!
RUM BUTTER GLAZE
- 1 1/2 cups granulated sugar
- 1/3 cup rum (muahahaha)
- 1 cup heavy whipping cream
- 1 tsp vanilla
First things first admire the rum in the cup. Ponder what the mixture of red wine and rum would taste like and then what it would do to your body. Decide against combining the two and move on.
In a saucepan over VERY LOW HEAT combine the rum and the sugar. Combine the two completely, stirring frequently. You’ll want to make sure that the sugar is dissolved before you finish this step. Remove from the heat and add vanilla. Pour into a measuring cup and let it cool.
Next take the heavy whipping cream and whip it good…that is to say, I put mine in the stand mixer and turned it on medium-high speed to start beating air into it.
VERY SLOWLY stream in the sugar-rum mixture while the cream is being beaten. And yes, you can lick the measuring cup when it’s done 🙂
You should come out with a frothy, thick glaze that smells like heaven in a mixing bowl. Take the dry cookies….
…and dunk them into the glaze. Set them on a cooling rack with foil underneath it to catch the dripping. You can consume right then and there, OR you can let the glaze harden overnight. I chose to do both and they’re equally good, so it’s kind of a win-win situation. I try to make it easy for you guys.

The slightly sweet shortbread cookie underneath that glaze of sugar, rum, and cream is exactly what I wanted after a long day at the office. Now I need to make this in drink form…

It sounds kind of funny, but I love using alcohol in baking. Especially in glaze or ganache- it gives it an extra bit of richness…

FYI: I know that you probably don’t like to copy recipes because of your own integrity, but legally speaking, the only part of a recipe that’s copyrighted is the actual written directions part. The combination of ingredients is totally up for grabs. Weird, but I suppose it makes sense. Maybe you already knew that? Now I’m just babbling…
