Land sakes, y’all. Isn’t it always just how things go when you get all motivated to be organized and clean and get things done, then you (or your kids or both) go and get sick. That’s life, right?
So this past weekend A had a fever virus that we were told just had to run its course. While it meant a LOT of sweet snuggles for mom, I just felt so bad for him. He tried so hard to be happy but he just felt so icky 🙁 It also meant that I slept on our guest bed, which is super soft and comfy…until my back realized that there wasn’t enough support and became incredibly soar for a few days. That, plus newborn-like sleep patterns, made this past weekend a rough one (hence the no post yesterday…sorry)!
Anyway, before all that stuff went down I spent some time photographing this amazing recipe for Riceland, which meant we had tons of yummy food to eat off of while we dealt with sickness. Y’all, I’m not kidding – this makes a T O N of food, it’s delicious, and so so so simple. I thought it would be fun to make/eat in a stack, but you could rock a burrito bowl bar with it too. Plus the poblanos and spinach make the final rice dish such a pretty emerald green color. Eat with your eyes, y’all, eat with your eyes!
