Perfect Pancake Bites Baby Shower for Picky Palate

Today is a super-special day for one of my favorite bloggers!

Jenny, the genius behind Picky Palate (and I am NOT using the word genius liberally here – her blog and food are amazing!), is pregnant with a sweet little boy!  And I think you guys know how much I love baby boys 😉

So sweet Jenny, first of all congratulations – I am so excited to meet your sweet little boy!  It really feels like just yesterday you announced that you were pregnant and now the time is almost here to welcome him into the world.  Time has flown by, and I just know that you and your family are going to have an absolute blast getting to know the new little dude 🙂

 

Second, WELCOME TO YOUR SHOWER!  I am so thankful that I was included in the incredible list of women who are using today in the blogging world to celebrate you!  After reading through the fabulous list of goodies from other bloggers I just wish that we could all be together and devouring everything together!

 

These pancake bites are cut-outs from my favorite yogurt pancake recipe and are the perfect one-bite breakfast, or in this case shower, treats.  I topped these with blueberry yogurt and strawberries and peanut butter and banana slices – so not only are they super tasty but they’re guilt-free too.

PERFECT PANCAKE BITES

  • 2 cups all-purpose or whole-wheat pastry flour (or a combo of the two)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1 1/2 cups yogurt (I like plain Greek yogurt)
  • 1/3 cup milk
  • 1 Tbsp sugar
  • 2 whole eggs
  • 4 Tbsp melted butter

In a large bowl whisk together the yogurt, milk, sugar, eggs and butter until smooth.  Sift together the flour, baking powder, baking soda and salt.  Gently fold the flour mixture into the yogurt mixture, adding a little more milk if the batter is too thick.  Cook the pancakes in a skillet heated over medium-low heat, about 3 minutes per side.  Let the cakes cool for 10 minutes.  Using a 1-1/2 inch circular cutter cut out about 3 circles per pancake (and maybe eat the scraps…mmm!).  Top with whatever your heart desires – yogurt, nut butters, fruit, jam, chocolate, nuts, syrup, honey – really, anything!

 

*NOTE:  these pancakes freeze really well; just thaw in the fridge or countertop and place under the broiler for a minute or so to crisp up the outside and keep the inside nice ‘n’ moist!*
