So friends – did you have a great Thanksgiving?! I know ours was quite the whirlwind – a lot of good and fun times interspersed with some hard stuff. Turns out that, among other things, having two kids with bad ear infections isn’t the most fun thing in the world. But having grandparents and aunts and uncles that love those kiddos big despite the whining/crying/sleeplessness/projectile vomit IS. So I’d call it a win and I’m even more thankful for the amazing family we’ve been blessed with.
Can I admit something? I love holiday recipes, and there are some amazing ones out there, but I’m kind of over it right now. Not over the holidays, but over the over-the-top decadence at the moment. Most of what I like to eat is good, wholesome, simple stuff that requires minimal effort and gives maximum flavor. We love great takes on the burrito bowl, and having a great base of perfect rice is essential.
When I worked for a burrito restaurant (think a local, even better version of Chipotle) we made cilantro lime rice that was just heavenly. It was the perfect mix of herbaceous and slightly sweet, and the texture was just right for soaking up all the goodness of the other burrito ingredients. I’ve been hooked on the cilantro lime flavor ever since, but felt like it was time to jazz it up a bit for our weeknight dinners. The addition of honey and lime zest bring out so many of subtle flavors while making the rice stand on its own, and it makes the perfect backdrop for almost any Mexican or Asian inspired meal!
