Good morning all! How are you guys doing today? I’ll tell you what, I was super encouraged by Chelsea’s post this morning…I can’t wait for the day I look in the mirror and think I look amazing! You go girl 🙂
Also, be sure to check out my sister’s new blog and send her some shout-outs of encouragement! She’s been a huge inspiration for me (seriously, she’s gorgeous and in GREAT shape) and I’m so proud/excited about her blog 🙂
So, I have a confession: last night Nate and I partook in the Taco Bell Drive-Thru Diet. You read correctly – Drive Thru Diet. We were in a huge hurry to get to our friend’s house, and Taco Bell was the only place we could think of on the way there. Do I think you should try to lose weight on this diet? Absolutely not. But I do think it’s nice to have highly advertised healthier options at fast food places. I had 2 steak soft tacos (tortilla, “steak”, lettuce, pico) and a bean burrito (tortilla, beans, pico). It was OK.
THEN we got to our friend’s house where there was this fabulous dip and cookies with frosting! The crack dip was cream cheese, a packet of ranch, and a can of pickled jalapenos (chopped) and their juice. OMG. It was awesome, but I think I might’ve found a way to make it better for you. Except for the chips. I won’t change those 🙂
Here is a shot of Nate holding one of my cookies (I had 2.5):
It was sooooooo good! The cookies (made by a friend) were a box of cake mix, a stick of butter, and an egg. The end. ‘Twas delish!
We got home and basically climbed in bed immediately. This morning, though, I had ANOTHER cookie: Triple Chocolate Breakfast Cookie!!!!!
This is yet another one of my takes on the 3-Minute Cookie from Tina. In the mix: 1/2 cup oats, 1/4 cup egg substitute, 2 packets of Truvia, 1/2 tsp baking powder, 1 Tbsp cocoa powder, 1 packet of Amazing Grass chocolate stuff, 1 Tbsp milled flax, 1 Tbsp shredded coconute, 2 Tbsp dark chocolate chips, 1 Tbsp peanut butter (smeared on top). Pre-PB stir it all up in a bowl and microwave for 1:45. You’ll be in heaven.
But seriously, SO good. And so rich! Next time (i.e. tomorrow morning) I’ll probably make it smaller since it was so rich. I never thought I’d eat a triple chocolate cookie for breakfast, but I’m glad I did today!
I’m thinking mid-morning I’m going to do some damage to (in Gina’s words) these bad johnnies:
We won’t have any internet tonight (sad) but it’s all good because come Friday we’ll finally be switched over the Direct TV and (hopefully) a better, more consistent internet! Woohoo!!!!
What’s your favorite healthy treat? Anything you’ve made up on your own?
A lady after my own heart – I adore cookies! That chocolate breakfast cookie looks fabulous – I need to try that soon.
YAY! I’m glad that made you happy-you ARE beautiful and should feel that way EVERY DAY 🙂
My favorite healthy treat is frozen bananas in the food processor. YOM.
it’s pretty simple, but i like to just mix chopped fruit in with some low-fat, low-sugar yogurt and sprinkle granola on top for a simple parfait!
