Ode to a Holiday Weekend

Good morning y’all! How was your 4th yesterday?!  I know we had an amazing time…and I am so thankful to have to off too!  The weather’s amazing and I can tell we’ll get to spend some quality time outside 🙂

I started the day off with another vegan smoothie:  3/4 cup almond milk, 3/4 cup POM Wonderful, 1/2 cup frozen blueberries, 1/2 cup frozen peaches:

So delicious!  I think I like the strawberries in there better, but I wouldn’t turn this one down either 🙂  After church we came home and, while Nate and my dad fired up the smoker, my mom and I got supplies for lunch together.  I decided to go with a FlatOut Wrap with marinara, 1 slice of ham, 1 slice of turkey, mozzarella cheese, and pepperoncini with a side of chips:

Another great meal on the 4th of July 2010!  The rest of the afternoon we shopped for freestanding air conditioners before deciding that we weren’t going to get one (we really just need to wire our bedroom ceiling for a fan).  When we got back I made some homemade BBQ sauce based on this recipe, and then made some lemon curd!  I’m saving the lemon curd for a later date, but the BBQ sauce was for last night’s AMAZING dinner, baby back ribs:

“I want my babyback babyback babyback, I want my babyback babyback babyback…” We also had a big, fresh salad with romaine, carrots, bell pepper, and avocado:

I grilled some corn we bought on sale (rub each ear with about 1/4-1/2 Tbsp olive oil and sprinkle very lightly with salt; grill for 2-3 minutes on each side, turning frequently to make sure it doesn’t get too burnt):

I ended up having 4 ribs, 1 ear of corn, 2 whole grain rolls, and my salad.  I was STUFFED! Y’all, these ribs were the best I’ve ever had…and my parents said the same thing!  They were tender, juicy, sweet, spicy, and full of incredible smoke flavor.  We should go into business.  Seriously. 🙂

Sigh.

I don’t even know what to say at this point because I’m dreaming about those ribs.  At 7AM.

OH!  That’s right!  So I’m starting a new little thing today on here. As you guys know, due to extenuating circumstances, I can’t really post a REAL post in the afternoons anymore.  HOWEVER, as I try to work on my photography a little more I thought it would be fun to post 1 picture of something random every day.  It takes almost no time at all and it means I can work on getting better at something I love!  So make sure you check back this afternoon for the first one 🙂

What’s the best BBQ you’ve EVER had?  It can be anything (veggies or meat) and anywhere! My husband and parents are really great at BBQ and smoking food, but the best BBQ I’ve ever had, hands down, is at the Salt Lick outside of Austin.  They have a smoke pit that’s the size of a normal bedroom FULL of meat!  And the sauce?  Oh my word…be still my heart.  It’s a mustard-based sauce that is heaven.  Pure heaven.  Amen.

    I dont know if I have EVER had what people would consider “authentic” BBQ! But I love what I have had, especially BBQ pulled pork sandwiches. I really need to go to a REAL barbeque place. Any in LA anyone knows about…?

    I don’t eat much chicken anymore but I remember these lemon herb chicken breasts that I had at a BBQ as a kid. To this day I still haven’t had anything so yummy off the grill!

    We have a Sonny’s BBQ that is down the road from us and it is still owned by the original owner and founder Sonny Tillman. Therefore, he drops by quite a bit to make sure every thing is perfect. Before going there, BBQ wasn’t anything really great to me.

    I love ribs too. My dad makes the absolute best BBQ babyback ribs!!! He slowcooks them for several hours before grilling them (and slathering with delicious BBQ sauce), and it just makes the meat fall off the bone. It’s to die for…..

    I can’t remember the best bbq food I’ve *ever* had, but I can say that I LOVE bbq’ed hot dogs…and I’m very picky when it comes to hot diggities 😛

    Joe Allen’s in Abilene, TX has some of the best BBQ! The place looked like a total dive on the outside but inside it is BBQ heaven!!

    I really can’t quite think of the best BBQ I’ve had… but my husbands best was in North Carolina. They have great southern BBQ, he liked the spices, the portions, and they had interesting sides (ie. fried okra) to accompany the BBQ!

Working on my #avoquados y’all! This protein smo Working on my #avoquados y’all! This protein smoothie has 40 grams of protein, lots of green goodness and tastes like a pineapple-vanilla dream!

- 1 cup water
- 1 cup frozen pineapple
- 1 cup frozen kale or spinach
- 1 scoop vanilla protein
- 1 serving collagen peptides (I use 2 scoops of @bulletproof brand; some brands just have one big scoop)
- 1 scoop greens powder (I used @amazinggrass)

Blend and enjoy!
🥗 FAST FOOD! Real real: I hate when people are 🥗 FAST FOOD!

Real real: I hate when people are all, “you can cook food in the same time it takes to grab takeout.” That is not always true, and sometimes it’s just about not wanting to try. Effort is hard, amen?!

Today I’m thankful to have had the energy and want-to to cook something a little healthier and save a little money. That’s not always the case, but today it was and I’ll count it as a win!

In the bowl: 3/4 cup black beans, 1/4 cup corn, 2 big handfuls of spinach, and two eggs. Seasoned it all with salt, pepper, garlic and smoked paprika!

Any wins y’all feel like sharing today? Let’s hear it and celebrate!
Chocolate Peanut Butter Protein Oats! (AKA the thi Chocolate Peanut Butter Protein Oats! (AKA the thing I’ve been eating on repeat all week):

- 1/2 cup old fashioned rolled oats
- 1/2 cup water
- 1/2 cup milk of choice
- 2 tablespoons brewed coffee (optional)*
- 2 tablespoons powdered peanut butter
- 1 tablespoon cocoa powder
- 1 tablespoon ground flax seeds
- 1 serving unflavored collagen peptides
- Sweetener of choice
- 1 tablespoon chocolate chips

Heat the oats, water, milk and coffee in a small saucepan over medium heat. Cook until thickened to your liking (although keep in kind the flax seeds and cooling will thicken it even further). Remove from the heat and stir in the remaining ingredients except the chocolate chips; I like to use a whisk to make sure the collagen doesn’t clump. Pour in a bowl, sprinkle with the chocolate chips and enjoy!

*I love to add a little coffee to mine to help enhance the chocolate flavor, but you do you!
And sometimes this is what it means to “work fro And sometimes this is what it means to “work from home.” 😂
Mentioned this yesterday in the ol’ stories, but Mentioned this yesterday in the ol’ stories, but thought it was worth sharing here too. When it comes to how I plan out meals, I look for 3 things:

🥗Whole foods. Not like the store (that’s called Whole Paycheck, right?), but meaning foods that haven’t been minimally processed. Fresh veggies, lean protein sources, whole grains, etc. I do have a few processed things on hand (protein bars) just in case I’m in a place where I need something SUPER quick, but that’s it. 

🥗High fiber. There are so many reasons we should be getting in plenty of fiber (Google is your friend here guys), but if I’m being honest I just feel better when I’m getting plenty of it. Leaner, more regular, more satiated. The list goes on! Besides the obvious fresh produce, I also eat plenty of legumes, whole grains (rolled oats, farro, quinoa - even though it’s a seed), flax and chia seeds.

🥗Hit my protein goals. Again, an essential nutrient. I have composition goals, and for my muscles to recover from my hard workouts I have to make sure I’m getting in enough protein. For me this means chicken, fish, and the occasional beef or pork.

It’s Friday, which means a myriad of things:

1️⃣Weekend vibes! Think soccer games, yard work, church, family time. Love it!
2️⃣The end of my meal prep. Not gonna lie, I won’t make this stew again...although the couscous was a fun addition!
3️⃣Sleeping in. HALLELUJAH.
4️⃣A chance to set up next week to be a great one!

This little parfait is a mini jar filled with plain Greek yogurt and homemade strawberry chia jam 🍓. No sugar added and tastes like a cheesecake - I’ll take it! Jam recipe is in my “food” highlight - just sub any frozen fruit in the same amounts and voila!
