I have to say, for a while there I was so annoyed with the number of people posting about macaroons. It just seemed like everyone and their mom was making them and proclaiming them as the end-all be-all of cookies. And I was annoyed.
Why? Who really knows these things…even I don’t know how to explain myself sometimes. HOWEVER, after trying this recipe that I found in my great-aunt’s recipe box in Oklahoma I am proud to admit that my annoyance was not well founded.
They’re the easiest thing in the world to make. And they are chewy and yummy and sweet and delicious. And you should totally make them.
I mean really though, how could something with only 5 ingredients be so incredible? I’m tellin’ you, it’s magic like this that happens in the kitchen that makes me love cooking. The simplest ingredients can make the best dishes, and those always turn out to be the things I love the most!
So yes, you should go make these. Yes, you should let your life be changed by them. Yes, you should revel in their simplicity. And if you’re annoyed, I’m sorry…but I’m hear to preach about the truth!
- 3 cups shredded coconut
- 2/3 cup granulated sugar
- 4 egg white
- pinch salt
- 2 tsp vanilla
Preheat oven to 300. Mix all ingredients together and drop by the spoonful onto a baking sheet lined with parchment paper or a Silpat. Bake for 20-25 minutes until golden brown. Let cool completely (I dare you to try to keep your paws off!) and enjoy!
In other news there was a bachelor party that happened at my house last night; I wasn’t invited. All I know is we have to re-vacuum the carpet, wash every dish we own, and my cookies are gone. The pictures could be interesting…

Now THAT is the kind of macaroon I enjoy. The fancypants French ones are nice but I like a solid, plain macaroon myself.

I pretty much use this recipe except I don’t use vanilla, instead add either orange or lemon zest. They are a favorite around here.

A way to make those even better is to dip them in melted chocolate. I had my first chocolate dipped macaroon the other day and almost fell outta my chair.
