This Mixed Berry Breakfast Cobbler is a GREAT meal prep option for breakfast, snacks, or even dessert! Use whatever berries you have on hand, fresh or frozen, and enjoy at any temperature!
I don’t know about you guys, but meal prep is something that has plagued me for a long time. What do I make? Will it be boring? Will I save money? What supplies do I use for food storage? While I can’t pretend to answer every question, I have found that by prepping some meals, and then leaving some flexible wiggle room for the rest, I’ve definitely made my life much easier. This mixed berry breakfast cobbler is no exception!
When I posted it on Instagram a few weeks ago this recipe quickly became one of the most saved and shared posts I’ve ever had. Sounds like everyone needs a good breakfast meal prep option, amen? While it’s been a minute since many of us have had to run out the door in the morning (a perk of staying at home I suppose), having something quick for breakfast really does help a weekday go smoothly.
Intermittent fasting is a big part of my routine, so while I don’t typically have a meal first thing I do find that having this mixed berry breakfast cobbler in the fridge makes breaking my fast with a healthy option much easier. I love topping mine with some plain Greek yogurt for added protein, and the creamy texture pairs perfectly with the crisp topping and sweet berries. Fast food at its finest!
Lastly, you can make this in a large 9- x 13-inch baking dish, but my preference is to bake them into individual cobblers. This helps me with portion control, which is a focus of mine (what can I say, I love food!). I also prefer these at room temperature or cold, but it’s great warm as well! Finally, and as always, if you want to make some subs? DO IT! This is a flexible recipe. Use the berries you love or have on hand or find at the store. Don’t have almonds? Try walnuts! Only have quick-cooking oats? No big deal! I’ve always found that while baking really is a science, there’s also a lot of leeway too.

MIXED BERRY BREAKFAST COBBLER
Makes 6 large servings
- 8 cups mixed berries (I used blueberries and strawberries)
- 2 tablespoons cornstarch
- 1 teaspoon cinnamon
- 2-1/2 cups rolled oats
- 1-1/4 cup almond flour
- 1 cup chopped almonds or pecans
- 1/2 cup honey
- 1/2 cup coconut oil
- 1/2 teaspoon salt
Preheat oven to 350 degrees.
In a large bowl combine the berries, cornstarch and cinnamon.
Pour the berry mixture into 6 ramekins or a 9- x 13-inch baking dish.
In the same bowl combine the remaining ingredients.
Mix together until evenly combined.
Spread evenly on top of the berry mixture.
Bake at 350 for 40-45 minutes, or until golden brown on top.
Allow to cool for at least 10 minutes before serving.
