Happy Friday y’all! So glad we made it 🙂  I loved reading your comments from last night’s post about how your plans had to make way for BETTER plans…they all made me smile!

Speaking of changes in plans, last night we had big plans to lay low at home or go see a movie, but by the end of the day we realized that we needed to meet with some friends regarding conflict in their marriage.  Dinner was rushed, but I made a sweet new pasta dish that we loved!  I think I’m going to call this Spicy Shrimp, Carrot, and Pea Penne:

  • 40-50 medium shrimp, peeled and deveined
  • 2 cups shredded carrot
  • 1.5 cups frozen peas
  • 1 lb whole wheat penne pasta
  • 2 Tbsp butter (optional)
  • 2-4 cloves garlic, minced
  • 1 tsp each of dried basil, thyme, chives, pepper, crushed red pepper flakes, salt, onion powder
  • 1/2 cup grated parmesan

Cook pasta to al dente according to package directions.  Reserve about 1 cup of the pasta water.  In a large nonstick skillet saute the shredded carrots for about 5 minutes over medium heat.  Add garlic and cook 2-3 minutes longer.  Add raw shrimp and cook until just done.  Add the frozen peas, the spices, and reserved pasta water.  Simmer for about 3-4 minutes until peas are warmed through.  Add the butter (if using) and let it melt into the sauce.  Add the pasta, stir to coat, and finally add the parmesan cheese and stir until combined.  Serve immediately!

Like I said, we had the privilege of working with some friends on some conflict in their marriage, and although there were tears and a little frustration, but in the end there was a really great discussion and I feel hopeful that things are going to be getting better for them.  I’m just thankful to be apart of this couple’s life and so happy that they’re in ours!  Afterwards we decided that we all needed to grab a beer and just have a good laugh.  We hit up CB & Potts where I had the Total Disorder Porter:

Total disorder indeed!  I have to admit I was pretty tipsy at 10 o’clock last night…oops 🙂  We went home and I went straight to bed.  This morning I did a pyramid upper body workout (kills me every time) and Day 3 of the HardCore Challenge.  Breakfast was an amazing breakfast burrito from the burrito lady that comes to our office:

Oh Lordy this was good!  It had spicy sausage, egg, potato, cheese, green chiles, and a spicy (and garlicky!) salsa on the side:

Y’all, after eating this I felt like I’d just run 10 miles in Houston humidity…I was sweating like crazy!  I love me some spice though, and I’m so glad we got burritos today.  Nate made me a latte on the espresso machine at work:

And I’m a happy camper with a full tummy and only minimal heartburn 😉

    I’m a fan of spicy foods too. We have someone come to mow the lawn, but my husband maintains the landscaping. We have an agreement, I maintain the interior and he maintains the exterior. Plus, I hate bugs!! LOL

    I sweat when I eat spicy food too. I live in a condo with my fiance so we don’t have a yard yet. But kind of on the same note, we both share in the housework. I do a bit more than he does, but I also cook more (my choice) so I feel like it’s my responsibility to clean up the kitchen. I love it when he surprises me with freshly folded laundry or no dirty dishes in the sink.

    We split the yardwork fairly evenly, though I have to admit, we don’t around to as much as we’d like. Most of our time has been going into our garden, and since Steve likes to dig and plant and I like to weed and harvest, we make a great pair.

    Yum! Pasta looks yummy!

    I’m a single girl with a big house to myself so I’m in charge of all the chores. 🙁 Luckily my backyard is “desert landscaped”, aka rocks with a few bushes set on drip timers. So the most yard work I have to do is pull a few weeds coming through and watch my beautiful tomato plant grow!

    It really depends. We do gardening type stuff together but he mows the lawn.

    Um. .. that pasta looks amazing.
    I’m not married and I also just discovered I need to learn how to do yard work because today I went outside to water the lawn and ended up soaking myself.
    On second thought, he’s gonna do the yard work. Although I want to have a garden that I tend to.

    Bf does it all. He loves all the lawn tools, so I don’t think he minds it too much haha

    I can’t really comment at this point in my life – we rent, so even though we have a yard, the landlords do most of the work. But I imagine that he’ll do most of the yard work because I handle almost all of the cooking.

    I want a burrito lady?! How does that happen:) Glad you took a long run to sweat it out. I am always afraid people will be able to smell the wine through my pores.

    I actually like doing yardwork, but my husband is the one that hands me the tools. Otherwise I’d probably just stand there and pick weeds.

    My husband usually takes care of the grass and I rake, to tend to the flowers, and trim the bushes.

    We go with the traditional. He does the power equipment like mowing and weed whacking while I do the inside stuff like cooking and cleaning.

    I do help outside a lot though. In fact I just posted one of MY landscape projects last week on my blog.

    I also love pruning trees, I think I must have been a logger in a former life.

    I love you blog, I dont have a husband but my roommate is my boy cousin and he does all the yard work…

    I am actually coming to Denver in July for the first time…I am excited..

    Husband does the lawn and trims things, I do the garden part for the most part. I end up doing a lot of the dog care stuff like bathing them, picking up you k now what in the backyard, etc.

    Keith edges and pulls weeds but I actually LOVE mowing. I am so anal and I love seeing my neat columns as I go down the yard! haha! I know…I am a dork!

    My boyfriend and I share all household chores fairly equally. He mows the lawn, I pull weeds. He takes out the garbage, I bring the garbage cans back to the house, etc.

    Well he is suppose to do it that was our deal, I do the inside he does the outside but I always have to “help out” so I would say I do more!

    He mows, trims trees, etc. I pull weeds and take care of flower beds and such. Now if only I could get him to do more housework. 🙂

    I love marriage ref Fridays…I hope they continue forever. We kind of have an unspoken rule that my husband does the yard, I do the inside of the house. Obviously, in some months the work is great inside/out, so we just help out. I like doing yardwork so it doesn’t bother me. 🙂
