Hi everyone! This post is going to be a quick one because we are headed out to The Brasserie for a fabulous happy hour to celebrate my boss’s last day! That’s the sad news I was alluding to last week…my boss, Shannon, has been the best manager I’ve ever had, and even though she’s going to be spending more time with her precious kids I am very sad she’s leaving! I’m not sure what the future entails for me at my current job, but I do know that her leadership has been one of the things I love most about my company!
Lunch today was delicious! Leftover Spicy Shrimp, Carrot, and Pea Penne (about 1 cup):
And my very first Chobani! ‘Twas fabulous…creamy and not too sweet 🙂
Thanks so much for all of your comments on Marriage Ref Friday! It sounds like just about everyone who has a yard splits the yard work or supplements that split with doing other chores around the house. We do the same kind of thing…I’m “in charge” of weeding and planting flowers and herbs, and Nate does the edging and the mowing, which works out perfectly for me since I hate mowing! We definitely have our fair share of yard work to get done tomorrow…and I wouldn’t be surprised if I’m hobbling around at the Colorado blogger meet-up on Sunday!
Speaking of the Colorado blogger meet-up, I need your help! I won’t be able to swing home before heading to Denver after church on Sunday, so I need some ideas on stuff I can bring to share with everyone! I have a cooler I can use if necessary, but would prefer not having to if possible. Don’t let that discourage you though…let me know in the comments your favorite thing to take to a picnic on a warm day!

How about a nice pesto pasta salad? Or a pasta salad with grilled/roasted veggies? Or a bean salad?

How about a an mandarin orange salad with pineapple and marshmallows.
Ingredients:
2 – cans of mandarin oranges
1 – large can of pineapple tidbits (must be tidbits)
3/4 bag of marshmallows
Large Packet of Orange Jello
Large Container of Cool Whip
Directions
1. Put all of the Cool Whip into a Large Mixing Bowl. 2. Add the can of Pineapple Tidbits (drain fruit). 3. Add the first can of Mandarins (drained completely) then add the second can (semi- drained). 4. Mix everything together carefully, do not break up the fruit. 5. Add in the Orange Jello Mix. 6. Continue to mix until it is orange. 7. Add in the Marshmallows and mix one last time until everything is well mixed. 8. Refridgerate until serving!! 🙂

A dish I like to take to a picnic is a super-easy black bean salad. All you do is take (rinsed) black beans, diced bell peppers (I use any color but green), diced tomatoes and red onions, and any other veggie you like (cucumber is good). Season to taste with salt, pepper, garlic powder. Sometimes I add a little cumin. I don’t measure anything so I can’t really help you on that but it’s a yummy and healthy little dish!

Cold fresh fruit cut up in a bowl and a bottle of wine is always good. Maybe a cold pasta salad…instead of a mustard or mayo sandwich which may sour if not kept too cool. Have a great picnic and awesome weekend!

Sorry to hear about your boss leaving. Our CEO is retiring, and the Director of Education (my current supervisor) is the number one CEO candidate…so it looks like things may be a’changin’ for me at work as well…change is unsettling sometimes, isn’t it?
