BOO!

How ’bout that face to greet you right away on a Wednesday morning?

 

The good news is that I don’t actually look like that today.  And by “look like that” I mean scared out of my mind.

 

See, this post is ALL about our trip over Labor Day weekend, and after putting up all of my Instagram pictures I’m kind of sad and want to go back.  Lakes are awesome and I absolutely LOVE being around water.  The lifestyle is just so laid back and I have to admit that one of my favorite things is to just jump in and float around for a while.  Being in water is one of the only things that really seems to help me just totally clear my mind and just sit in awe and thankfulness of my life.

But back to the trip.  We did things a lot like how we did them last year, only this time with a baby in tow on the outside of my body (last year I was pregnant).  Thursday morning we got to sleep in slightly and then drove the million-mile road trip to the Denver airport.  If you live here or have ever traveled through Denver you know that the airport is literally, at minimum, 10 miles from anything.  We live a lot further away than 10 miles, so it’s always quite the affair to get to the airport, find parking, take the bus from parking to the actual airport building, check bags, go through security, and then finally take the train to the gate.  It’s quite the wild ride, and when you have a baby on board it gets even more complicated.  Luckily Wes is such a trooper and was in a great mood the whole time.

 

When we got to the gate though – yeah, he was hungry and very very tired.  I fed him a bottle and tried to rock him in his stroller, but he wasn’t having it.  And the carrier?  Yeah, he screamed the whole time in that.  The plane ride to Reno was even crazier and I think he maybe slept a total of 20 minutes the whole time.  I just felt so bad for him – little dude was so sleepy and fighting it with everything he had.  When we got to Reno we made our way to Harrah’s and just hung out and let Weston sleep.

 

Side note:  I am horrible at gambling and will probably never try it again.  That is all.

Friday morning we got up and drove the 2 hours to Lake Almanor without any problems, and once we got there this was one of the spectacular views we were greeted by.  Last year was our first year to visit, but I have to say that this lake is probably one of my favorite places in the world.  It’s fairly secluded and quiet, but has stunning views and beautiful water.  The weather is pretty much perfect – low 80’s for the high and 40-50 for the low – and it’s just gorgeous there.

The big change this year was that I could partake in happy hours on the porch before dinner (we were staying with friends).  Last year I couldn’t, and I was so looking forward to enjoying some fabulous California wines this time around.  I normally only like red wines, but I had this buttery little Chardonnay from Rombauer and absolutely loved it:

Every night we’d have dinner and spend a little time around a fire before heading off to bed.  The great news is that Wes slept SO well, which means that we all got plenty of rest.  YAY!

And while all of the food we ate was fantastic, I have to say that the moment I had this Ortega chile burger with avocado and perfect fries it was just heaven.  It was one of those moments where only a really good burger would do.  The stars aligned and BOOM! there it was.

 

My tastebuds did a happy dance.

Every day was more of the same in such a good, GOOD way.

  • Wake up
  • Look at the lake
  • Eat breakfast by the lake
  • Get IN the lake
  • Snuggle with Weston by the lake
  • Play with Weston by the lake
  • Eat lunch by the lake
  • Spend more time in the lake
  • Happy hour by the lake
  • Dinner by the lake
  • Fire and wine by the lake
  • Falling asleep with my husband by the lake

I think Wes is going to be a water baby too 🙂

Sigh.  I want to go back.  But I sure do love looking forward to these trips too – it’s definitely something I’ll never ever take for granted.  It’s a full day (or 2) of travel to get there, but it’s 1,000% worth it when we’re there.

My absolute favorite things to do (besides snuggling and eating with my boys) were kayaking and paddle boarding.  I would go until my arms burned out and then just sit in the water, allowing myself to be rocked by the waves from random boat wakes.  I watched adults and kids alike having a blast together, truly enjoying one another’s company.  I basked in the sunshine, thankful for its warmth and the way that it glittered across the water.  I laid there and just thanked the Lord for life, for love, for beauty.  For family and food and water.  For warm days and cool nights.  For strength in my body.  For coffee and burgers and wine.  For sunscreen and life jackets and sunglasses.

 

I thanked Him for everything – but most of all for salvation and for the way he reveals himself in so many ways, all of which are good and truly move my soul.

So yeah…I think it was a pretty awesome trip.  Oh, and next year?  Yep, we already have our tickets.

    Heather! I am a long time reader, first time commenter. I HAD to post because I have been going to Lake Almanor every summer with my entire maternal extended family (four generations) my whole life! Literally since I was two. I LOVE that place so much!! We stay in the Country Club in multiple houses (there are like 25 of us!) and host dinners for each other, go wake boarding, fishing, and hiking. It is the most fantastic family vacation spot there is and I can’t wait until I have kiddos of my own to share it with. Being from Cali I am surprised you have heard of my beloved lake, let alone traveled so far to enjoy it!

      hey jennifer! so glad you stopped by – lake almanor is seriously one of my favorite places ever. we stay with family friends who are from the bay area, which is how we found out about it, and are planning on going back every year!

      i love that your whole family goes together – what fun memories!

    It’s amazing how much your son looks like you! Funny enough, if I was a boy my name was supposed to be Weston. I was also born and raised in Colorado, maybe is a CO thing. 😉

    I’ve never been to Lake Almanor, but everyone I know who has visited, lovessss it. I’m surprised you guys make the trek all the way from CO! I should really make the 4 hours drive and see it sometime.

For my @fasterwaytofatloss friends, here’s an AM For my @fasterwaytofatloss friends, here’s an AMAZING low-carb day dish: roasted cauliflower with smoked paprika and almonds! It’s so simple to make, incredibly flavorful, and pairs really well with truly any protein. Enjoy!

ROASTED CAULIFLOWER WITH SMOKED PAPRIKA AND ALMONDS
* 1 head cauliflower, cut into small florets
* 2 Tbsp olive oil
* 1 tsp salt
* 1 tsp smoked paprika
* 1/2 tsp garlic powder
* 1/2 tsp pepper
* 1/3 cup slivered raw almonds
1. Preheat oven to 375.
2. Spread the cauliflower florets onto a large baking sheet and drizzle with olive oil.
3. Sprinkle evenly with salt, pepper, paprika and garlic powder, then toss to evenly coat it all.
4. Roast at 375 for 25 minutes, tossing halfway through.
5. When there are 3 minutes left, open the oven and sprinkle the almonds on top.
6. Roast for another 3-4 minutes until the almonds are just lightly toasted, then remove and serve immediately.

I remember when I wasn’t sure it would sprout at all, and then one day the seed split and there it was! We also hit a point November-January where there was zero growth and I wondered again if it was a waste of time.

Now there are new leaves, new height, and (most importantly) stronger roots, all because of a little patience and care (it’s a metaphor y’all 😆). I find myself excited about the next season where it will be planted in dirt, which will offer new challenges - and growth- of its own. What a blessing to learn such deep lessons from a humble seed!

God, thank you for the little things that show us how much the little things matter. Amen.

Wanna know what DOES work though? This amazing new deodorant! The biggest question I get about cleaner products is always about which is the best natural deodorant. Friends, I’ve found some decent ones in the past, but this one takes the cake!

One of my physical health goals this year is to gain lean muscle and get stronger, which means that I need to be getting enough protein in on a daily basis. For me a great source of lean protein is chicken breasts, but if they don’t taste great I’m not having it! So, if this is you, I have a solution for you: BRINE YOUR CHICKEN BREASTS! 

Here’s my fail-proof brine recipe for perfectly flavorful chicken breasts. Cook ‘em however you want - just make sure you brine them first! The difference is enormously worth it!

Recipe is for about 4-6 chicken breasts:
•3 tablespoons kosher salt
•3 tablespoons honey
•2 cups lukewarm water
•2 cups cold water

In a large saucepan bring the first 3 ingredients to a simmer. Remove and stir until the salt is dissolved, then pour in the cold water. IT MUST BE COLD - otherwise the brine will start to cook the chicken breasts! When the mixture is lukewarm, add the chicken breasts, making sure they’re covered in the brine. Cover and refrigerate for 1-6 hours (I recommend 6 if you can). When they’re finished, remove from the brine, rinse, pat dry and cook as desired!

I love running, walking and hiking, but weather, childcare, and a certain global pandemic make consistently getting out to do those kinda difficult. I’ve always enjoyed my #homegym, but quality cardio equipment is expensive! 

So what’s a girl to do?

This past fall I randomly decided to look at steppers, and found this @sunnyhealthfitness one on @walmart for $50! I just wanted something that I could use for 20-30 minutes 4-ish days a week, and it’s been an amazing fit. Would I like a Peloton? Duh, of course. But this has worked so well with the budget and space we have!

What’s your biggest struggle in curating a home gym?

I was weird about it first, felt like my problems weren’t big or messy enough to warrant professional help. And when I did start seeing my counselor I was awkward (this shouldn’t be a surprise). But here we are 4 months later and I’m seeing some incredible life-giving movement. God is so good, and I’m so thankful for friends who normalized counseling and therapy for me!
So. It’s been a while since I posted on the feed So. It’s been a while since I posted on the feed (or really in my stories too). Truthfully I’m still heavily processing the last 2 months, which were preceded by 10 other hard months. Life is brutal and beautiful and next-level hard and a joy, all swirled together. I won’t pretend that everything is OK; it’s not. I’m not.

This past weekend I had a moment of complete clarity and joy and the knowledge that I will be OK. And for that only-God moment I’m so thankful. For all of you who have been praying for our family, who have offered the sweetest words and condolences, who have truly been there, waiting and wading with me through the hard - thank you. God is still good. He is still on his throne. And I am so unwaveringly thankful for that!❤️

I have so many thoughts swirling around in my head these days, and half the time I don’t know which way is up. But I do know this: focusing on simplicity is the name of the game this year for me. It starts with the things I can control: my food intake, moving my body, my thoughts, my actions. The rest will stem from there!
