So this time last year I was about 20-ish weeks pregnant with an (unbeknownst to me at that time) baby boy on the way. His name is Weston. He’s a rockstar.
Funny thing is, this time last year, even before I ever knew that I was having a boy, I started to really get into football. Nate and I worked at the same company and would ride together to work in the mornings. He claimed that the only for him to deal with traffic was to listen to sports radio, specifically Mike & Mike in the Morning.
Now let me clarify that I have always liked sports – loved them actually – and totally enjoyed listening to sports radio too. I also feel like I should clarify that I don’t believe that liking football is only for boys, but something besides Nate wanting to listen to it was drawing me in. Maybe it was the entertainment, maybe I was just too tired to care. But all of a sudden I could talk the ins and outs of the current NFL and college seasons with the best of them. I think it kind of scared some of the guys I talked to how in tune I was.
I like to shock and awe, baby, shock and awe.
Regardless of the fact that I actually really like football now, I have to say that one of the best parts has always and will always been the game day food celebration. I’m talking all-out, delicious and NOT nutritious food like wings, nachos, queso, chips and dips galore…you know, the really good stuff. The one thing that always gets overlooked though?
Dessert.
I mean really, with all of the boundless goodies that we eat on game days don’t you think dessert should be pretty high on the priority list?
Well I do – and here’s literally one of the best (if not THE best) bread puddings I have ever EVER had and it has NO EGGS. No, I’m not crazy. Just lazy. When I run out of eggs and want bread pudding there’s now no need to make a run to the store. Promise you’ll love it!
EGGLESS BROWN SUGAR CRANBERRY BREAD PUDDING
- 1 package King’s Hawaiian hot dog buns
- 1 1/2 cups milk
- 3/4 cup brown sugar
- 2 Tbsp cornstarch
- 2 Tbsp canola oil
- 1/2 Tbsp vanilla extract
- pinch of salt
- 2 Tbsp granulated sugar
- 1/2 cup dried cranberries
Preheat oven to 325. Spray a 1-quart baking dish with nonstick spray or grease with butter. In a large bowl, whisk together the brown sugar, cornstarch, and salt. In another bowl whisk together the milk, oil and vanilla extract. Whisk the dry ingredients into the wet, making sure they are completely incorporated. Tear the hot dog buns into 1/2-inch pieces and fold into the milk mixture. Gently fold in the cranberries. Pour everything into the prepared baking dish, sprinkle with granulated sugar, and bake at 325 for 30-35 minutes until the liquid is absorbed and the top is golden and crunchy. Serve warm!

Yeah Mike & Mike in the morning! I usually listen to a book on tape on the drive, but when I don’t have one, it is always 104.3. Too bad it is now Mike & Joel… Anyway, our favorite part of game day is winning our Fantasy games! Haha. And the food, obvi. 😉
