Impromptu Party

Everyone loves a party, right?  And apparently Nate and I like to have parties at our house and plan everything about 30 minutes before everyone’s supposed to be there.  We just live for the thrill 🙂  Anyway, yesterday was a quasi-stressful day for me at work, so it sounded great to me to have friends over for margaritas and a makeshift Mexican fiesta!

First we stopped off at PetSmart and got Keira her birthday gifts:  a pink collar with a new nametag, a pink butterfly toy, and we got Bunker a bumper that was on sale.  Here’s the baby girl now modeling her new collar:

I drove the dogs home, let them out to go to the bathroom, and made a beeline for the grocery store.  Apparently I didn’t anticipate a party when I was there the other day…

Thank goodness my sexy husband was waiting for me with a cocktail when I got home!

Ahhhhhh, margaritas, how I love thee.  I had 2.5 of these bad johnnies:

The dogs were playing with their toys most of the night.  Since Keira got so much birthday love, I thought I’d give y’all a shot of Bunker “suckling” on the pink butterfly.  This is his pacifier!

We weren’t sure how many people would show up…it could have been 6 and it could have been 30!  Over the course of the night we ended up having around 12-14 or so show up, which was a great number!  Daniel was stoked about grilling up some fajita veggies:

I had a tortilla (10″) with some Spanish rice, chicken, steak, homemade beans, guacamole, a tiny bit of sour cream, and a sprinkling of cheese.  YUM!  I had a couple pieces of chicken after this too, but no photo.  After a couple margs it’s probably not a great idea to pick up expensive cameras and attempt to operate them 😉

It was a great night with friends, and made me really excited about our Ocho de Mayo party on Saturday!  Should be a blast…

I got up this morning and was NOT in the mood to workout, so I cleaned up the kitchen a bit and made some chocolate chip cookie bars for my office.  I figure I’ll do a great leg workout and some walking later today when I’m feeling better ifyouknowwhatimean.  We stopped and had breakfast at McDonald’s:

No picture of my sandwich, but I had a McMuffin, which I know is not great for me, but we were in such a rush this morning that there really wasn’t time to fix breakfast at home.  I’m having a salad for lunch and one for dinner, which I’m really excited about!  I’ve bee craving veggies in a bad way lately, and if you’ve been reading about my eats you’ll know why:  I’m not eating nearly enough of them.  This is a really busy time of year for us, and it’s almost impossible to make fresh meals all the time.  Not that it’s a good excuse, but I definitely want more veggies in my life STAT!


Do you have any tricks for veggie-packed meals during really busy time?  I’d love to be completely overloaded with them!

    Isn’t it great when you crave veggies? Honestly, I’m bad at fitting in but it helps to have them ready to go. As in, wash, peel, chop up carrots, broccoli, etc. I also tend to eat more veggies when I have fun ones! I get tired of the same ole same ole you know?

    Nope, no tricks! But when I grab a slice of cheese pizza for dinner in a hurry, I always feel a bit better when it’s loaded with veggies on top 🙂

    I’m impressed with your impromptu parties—that would stress me out WAY too much!

    Impromput parties – so fun and stress-inducing at the same time 😉 I find it hard to fit in veggies when I’m busy too, but I find roasting a whole pan full (500 degrees for 12 mins sprinkled w/salt and pepper and a coating of Pam or better yet, Olive Oil) works because they mirowave up pretty well (especially leeks and broccolini). In a pinch there are always the frozen steamers too.

    I wish someday I’d find my husband waiting with Margaritas after work. Oh, that would be amazing. Especially days like today….

    Green smoothies made with kale, frozen banana, an apple, carrots, water and ice. You get so many fruits and veggies in and it tastes good too!

    I think someone mentioned this above but roasted veggies are SO. DAMN.GOOD. I roast a TON of them a couple of times a week, and they’re perfect warm or cold, in a salad, over eggs, or with some greek yogurt dip.

    Another easy way to get more veg in – when I’m making dinner, I also chop extra veggies since I’ve got the cutting board out and I’m in the choppin’ mood 🙂 I put together a baggie of carrots, cukes, celery, jicama, get the individual paks of hummus or PB and throw them both in my bag for the day:)

    I try to prepare a lot of things during the weekend when I have free time so that it’s really easy for me to grab breakfast and lunch and tons of veggies on my way out the door. I also almost always pack my lunch the night before so its easier when i’m in a rush in the AM.

    Trader Joes has some great veggie stir fries. I always buy them, but end up being not sure what to do with them haha. They seem convenient though.

    Happy Belated Cinco de Mayo!

    As for veggies – might I recomend roasted veggies. Its the way to go – so simple to make and they taste delicious – the hardest part is waiting for them to roast!

    Sounds like an awesome party!

    At least the egg McMuffin is one of the lowest calorie breakfast items on the menu. That’s one point!

    Awe, cute puppy. I wish I could give my dog cutsie toys like that. She would have that thing shredded in 5 minutes flat. Unless it had a squeaker inside, then it would only take 2 minutes! Haha

    I don’t really have any tricks but I have recently started chopping all of my salad veggies and storing them in pyrex bowls in the fridge. This way it is really easy for me to put together a fast salad packed with veggies for lunch or dinner. Convience is key for me!

    Your dinner looks delicious!

    One trick I use for getting more veggies is to add them to my scrambled eggs. Broccoli and spinach are great in eggs.

    Mmmm I’m so sad that I didn’t have a margarita on Cinco De Mayo! 🙁

    Ok I’m OBSESSED with veggies! I actually love to eat broccoli and cauliflower raw-so I’ll wash them and then anytime I’m craving a snack or go into the fridge (which is often) I’ll grab some of those things!

    I’ll make my smoothies in bulk and freeze them, then the night before set it in the fridge to defrost so I always have something healthy and yummy on the go! and veggies?? haha I just eat them all raw like sugar snap peas….mmmmmm I think I’ll go have some now actually lol….your party looks so fun!

    I love Egg Mcmuffins!

    I eat my lunches cold, so I often pack leftover dinners in a cooler each day that include some veggies and fruits 🙂

      Oh totally did not finish writing before I clicked submit. I made a HUGE salad on Sunday and have been bringing one to work everyday as part of my lunch. Making it on Sunday night was key, the week just gets too busy!
