Sigh.  Last night I had such high HOPES! for making some fabulous homemade nachos (as in making the chips and everything).  I could see it in my head:  I would have only THE most glorious dinner in all of Bloggerland.  This would be my big break for taking over the world! I got home, sliced some tortilla, sprayed them with a little oil and seasoning, and into the oven they went!  “I’m a genius.  PURE GENIUS,” might have been what was rolling through my mind.

Ahem.  Oops!

The above photograph may or may not be the “chips” charred and completely black, sitting in my sink awaiting their destined date with the disposal.  Hey, I didn’t REALLY want nachos anyway…I really wanted huevos rancheros!

I decided to scramble up 1 egg and 3 egg whites in 1/2 Tbsp of butter, then top with the rest of the chili from Friday night, a big pinch of cheese, and some sour cream.  Like I said, I didn’t really want nachos anyway!

Dessert was the last of my precious Oikos caramel yogurts:

The good news is I hit up Walmart last night and they had Oikos again!  AND I still had some coupons from Stoneyfield (LOVE THEM)!  So I got the chocolate yogurt and the 16 oz plain.  There should be some fun recipes coming soon!  However, when I got home I was feeling really weak and tired.  I’m not sure why, but it might have been because of the crazy burnt smell aroma from my mad dinner-making skills.  Either way, I went straight to bed!

This morning I woke up with the WORST headache!  I wonder if it has anything to do with the weather change – spring in Colorado is crazy!  Snow and 20-degree temperatures one day and sunny and 65 the next.  There’s a big snowstorm rolling in right now, but yesterday was gorgeous.  Go figure!  I decided to make a Cherry-Chocolate Bomb (is that what they’re called?) after seeing it on Caitlin’s post:

  • 3 cups spinach
  • 1 cup nonfat milk
  • 1 packet of hot cocoa mix
  • 1 banana
  • 1/2 cup frozen cherries

‘Twas amazing.  I think I might have found a new favorite!  Although I’m wondering what that magical goodness would taste like with a chocolate Amazing Grass packet…?  I also had some iced coffee.  Before:

Again, thank you to all of you for being the sweetest group of women EVER.  Your comments on yesterday morning’s post have made me cry tears of thankfulness many times 🙂  The good news is that after a day of exercise and eating well I definitely feel much more “on track” than I did yesterday morning!  Anyway, I just wanted to say thank you again.  You guys are amazing!

I was reading Michelle’s post this morning, and I had the BIGGEST craving for hot dogs!  Y’all, I took a meat class in college.  I know what goes into hot dogs.  And if it’s a quality hot dog, it’s not going to be something insanely disgusting.  But even if it’s a low-end hot dog (if there is such a thing), guess what?  I still love them anyway!  Hot dogs, grilled cheese, and cheap pizza.  YUM!  There are times when something not so great just sounds amazing.

What’s your favorite thing to eat that might sound gross to someone else? Like I said, I love hot dogs, but I could also pop roasted garlic cloves all.day.long and not think twice about it.  The good news is my husband would be doing the same thing 😉

    I had a little tortilla mishap myself today. I tried to make crispy tostadas for us to put toppings on. But they got all puffed up. We used them as tortilla bowls instead of tostadas. 🙂

    AWW those poor chips!! I love tuna casserole and whenever I talk about it people turn up their noses. But once they try it they realize how amazing it is. Our version is just elbow mac, cream of mushroom soup, cream cheese and a can of tuna, all mixed together with potato chips on top. You can hardly taste the tuna really. It’s so delicious!

    I unfortunately love hot dogs too! I am allergic to chicken though and so many include chicken in them, which really limits my consumption of them. ahha.

    After reading you chip fail from last night, I went home and had a lunch fail! My Mediterranean wrap turned out extra crunchy… but ended up being the best meal of my life and I renamed it the Greek Taco! Maybe there’s hope for your chips too….

    I don’t eat meat, and I never really have cravings for meat, but sometimes I really want concession stand food! Like crappy hot dogs and burgers. It is the strangest thing. I think it’s because my whole family played baseball, so my springs and summers were spent eating food from concession stands!

    Mmmm, I LOVE roasted garlic cloves! And I dip my french fries in mayonnaise, which many people find absolutely disgusting 🙂

    LOL! I love how honest and open you are. I could’ve written you first paragraph about thoughts of your meal before cooking it.

    Once I put a tortilla in the toaster oven to toast and it became a flaming disk of fire. Shaun had to take the toaster oven outside and douse it in water to get the fire to go out. Bye bye toaster. Oh and did I mention that we had just moved into our house 2 weeks earlier? I almost burned down my first house within 2 weeks of living there.

    As for your question. I LOVE LOVE LOVE pickled tongue. It’s a specialty item that my hometown is famous for and I could eat it all day. I know it sounds awful but it really is WONDERFUL.

    Oh and I agree on roasted garlic. I eat it like it’s going out of style.

    I love hot dogs too and HATE when people try to talk smack about them!! You know they secretly think they’re delicious too! Even if we are all a little freaked out by the ingredients, they don’t taste bad. Isn’t that all that matters?!? Hehe. As far as Rhodey girl’s comment, I can back her up that it’s delish. My ex bf’s family was super Italian and served this all the time and it was delightful. I used to eat Spam as a kid. Haven’t had it in ages, but I know I would still like the taste. So sue me!

    Okay…don’t freak out…but I LOVE peanut butter and swiss cheese sandwiches (the real swiss). I know it sounds odd but really it is good. I made my mom try it and she is now hooked too. We eat them all the time!

    OH NO! CHarred chips are the worst. That has happened to me a couples of times when I just totally forget to out the timer on! At least you had a back up plan!

    Tofu scramble is something people think sounds gross but in actuality is very delicious!!

    Have I ever mentioned that your header makes me thirsty?? I love it so much, and it makes me crave homemade lemonade yummmm

    I absolutely love love LOVE hot dogs made by my dad on the grill (burned yum), but I haven’t eaten one in about 5 years. I can’t make myself do it, even though i really want to! Sometimes I wish I knew less than I did.

    I love tuna over pasta, but it looks like dog food. People are grossed out by it until they try it… soooo good when made with canned tomatoes + capers. YUM!

    I’m a veggie loving fool and can never get my fill of veggies! Not so weird in food blog world, but my meat and potatoes friends don’t understand my diet.

    I also like to add beets to my Green Monsters which technically makes the Purple Monsters but allthemore amazing!

    LOVE roasted garlic cloves!! For when you can eat meat again- cut small slices in steak and insert whole cloves. Grill. Have foodgasm. Senior week after college was full of full-nitrate hot dogs. And they were delicious. My coworkers tend to think a lot of the stuff I eat is gross!

    I have a habit of eating ketchup with my potato chips. Not super weird I guess, but usually when people see me do it, they’re like “GROSS!!!!!”
