Let’s just say that my relationship with oatmeal is a little rocky. It’s not something I necessarily crave, and I lived happily for years without it.
No more, my friends.Β No more.
Turns out all you need to do to rekindle a relationship with oatmeal is dump a bunch of butter and sugar into it, bake it off, and call it a cookie.Β Who would’ve thought?
This is another recipe that is actually supposed to make cookies, but being the lazy baker I am I just smushed it all into a 9×13 and called it a bar.Β No big deal.
CINNAMON OATMEAL RAISIN COOKIE BARS (OR COOKIES)
- 1 cup butter, softened
- 1 1/2 cups granulated sugar
- 1/2 cup packed brown sugar
- 2 eggs
- 1 Tbsp vanilla
- 2 1/4 cups flour
- 2 cups old-fashioned oatmeal
- 1 1/2 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup raisins (or chocolate chips…whatever you have on hand because mix-ins are fun :))
Preheat oven to 325.Β With either a stand mixer or a hand mixer cream the butter and sugars together.Β Add the eggs and vanilla and mix until thoroughly combined, scraping down the sides of the bowl if necessary.Β Sift together the flour, baking soda, and salt, and mix into the wet ingredients on low speed until just combined.Β Mix in the oats and raisins.Β Press into a 9×13 pan and bake at 325 for 30-45 minutes until golden brown and the center is no longer jiggly.Β Let cool completely and then cut into bars.

So yesterday was the first maternity shoot that Nate and I have done where I took the lead!Β I was a little nervous, but so thankful that we were shooting some great friends of ours.Β Baby boy is due any day now, and I can’t wait to meet him!
By the way, why is it not normal for EVERYONE to wear maternity jeans?! Word on the street is that they have a band that goes all the way up to your chest.Β I could see how this would be very helpful as I’m baking more…

You are too funny Heather! I find myself just shopping away and when I look up, I am stuck in the middle of the maternity section looking at cute tops and then quickly get back over to “my side of the store”. Ha. Someday I’ll be able to shop there for real. The clothes are so cute.
I LOVED maternity pants! That waist band was fantastic! I started wearing those pants like right away because they were so comfortable. i remember thinking they would be so great to wear post-pregnancy after I hit up the chinese buffet! : )

Lol…I totally have a maternity shirt that I got at Target that I wear all the time. I have a feeling I’m going to LOVE maternity clothes when that time comes.

It’s all about adapting foods to fit your needs…why have oatmeal in gelatinous form when you can eat it as a quasi-cookie :)?
I think the expansion factor that all maternity clothes possess is something I’d like in my everyday wardrobe – no more bad jeans days!
I already love oatmeal, due to all the fantastic possibilities.
You can put tasty fruit in it, sugar it up, and apparently you can cook it into bars!

Maternity jeans! I love the Friends episode where Joey wears Phoebe’s maternity pants to the Thanksgiving dinner. So funny. I always thought I might need a pair after seeing that.

Sometimes I buy clothes from the maternity section… no one knows and I think that those clothes are so much cuter and fit better than non-preggo clothes π wait… now my secret is out. DARN! π

Haha. Maternity jeans look so comfy! There are these accessories called My Hip T (featured long ago on Oh She Glows). I haven’t tried them yet, but am dying to.

Oh man – those maternity jeans are a blessing and a curse! I loved them at the same time, the band part kept falling down! I had to get one of those belly band things just to hold my maternity pants up!
And yes, other people wear them. Like those who are trying to lose our baby weight and REFUSE to by “normal” pants until that happens. π Hypothetically speaking, of course.
haha one of my teachers is pregnant and she wore jeans the other day and I was sitting there thinking how comfy those jeans looked lol….I lurve me some oatmeal cookies
That’s funny — one of my pregnant friends was so excited when she found the band that she informed me she planned on wearing it with all her low-rise jeans long after the pregnancy!
The bars look great, and I love that they are bars and not cookies. Because I think I could convince myself then that they are granola bars and a good, healthy snack.
These look so yummy! And perfect for the beginning of fall. Oh, and I have to tell you that I have a pair of maternity shorts that I still wear to this day. They are just so comfy and not very maternity-ish. π I am not above lying to myself!
