And So It Begins

Heather’s Dish is now on Facebook!  Come “like” it today :)

I have this weird feeling inside of me lately…something that leads me toward healthy options instead of actually going through with eating EVERYTHING that I bake.

I think I’m possessed.

This morning, the morning of our big trip, I awoke to a craving for healthy breakfast pizza.  The good news is that our emptied refrigerator would suffice for just the pizza I had in mind!

The only “unhealthy” part of the pizza?  I fried my egg in a little butter.  So sue me.  Or please don’t.  But really, a little butter goes a loooooooooong way in making something taste fabulous, and I needed no other seasoning on it after that!

So what’s the pizza?  It’s not really a recipe per se, but I’ll share it on here anyway!

SPINACH BREAKFAST PIZZA

  • 1/6 piece of pre-baked pizza crust (mine was about 4 inches across the top)
  • 2 cups fresh spinach
  • 1 egg
  • 1/2 Tbsp butter

Preheat oven to broil.  Heat a small saute pan over medium heat.  Toss spinach in there with a couple drops of water.  Let it wilt slightly, then season with salt, pepper, and garlic powder.  Remove from pan and place on pizza crust, spreading evenly.  It’s OK if there’s a little moisture; that’s what keeps this dish feeling like there’s a lot of fatty goodness when there’s not.  In the same skillet melt the butter over medium heat.  Fry egg for 1-2 minutes on each side and then place on top of wilted spinach.  Broil for 2-3 minutes until the yolk is done to your liking.  Mine was over-medium and tasted like perfection.

Who wouldn’t love a garlicky, salty, faux-fatty breakfast pizza?  Especially if you have a full day of work and driving ahead of you.  Or if you just want a change of pace from all the Christmas sweets you’ve been tempted with.

I’m off to eat some cookies…now that I’ve had my healthy breakfast and all.  Much love!

Creative and simple -love it! Every now and then, I simply MUST have a savory breakfast instead of oats of pancakes. This looks delish. I’d probably put some hot sauce on mine, too. 🙂

I am usually surprised when I crave something healthy, which happens more often than not (really Bianca, you don’t want your dinner to be comprised solely of brownies?) But it’s one craving I definitely indulge. I love eggs and spinach, and pizza with an egg is always yummy! I might add a bit of feta too 🙂

How can you not fry your egg in butter? It is the only way to make them 😉

I could never sue anyone for using butter. Especially when it’s involved in making a breakfast pizza. I think you’re legally in the clear with this one. And also, it looks delicious!

That looks fab. Which startled me- because I’m usually not a fan when people throw eggs on their pizza. But being as how this is a breakfast pizza, I guess it’s a wee bit different.
    Have a great day! 🙂

I agree! I’ve always thought the egg-on-pizza thing was a bit bizarre, but this seems to work perfectly!
