Skillet Cranberry Sauce Cobbler

How was everyone's Thanksgiving?! Throw a Coffee Party!

When we lived in Colorado we entertained all the time. It’s not something that necessarily comes naturally to me, but the more I did it the more I grew to really love doing it and the easier it got. One of the best types of entertaining (if you ask me) is to serve hot coffee, tea or hot chocolate and a small smattering of cookies and/or snacks. Lemon Olive Oil Cornmeal Cookies

Lately Nate and I have been working on eating well, and I have to say that we're doing really well:  choosing veggies over simple carbs, eating lean protein and having reasonable portions.  I'm pretty proud of us, but I have to admit that our sweet tooth (sweet teeth?) are still around in full force. Our {late} Weekend

Spicy Asian Marinated Steak

When it comes to our meals for the week I am really strict, working to really stay within a tight budget ($100/week for all of our food and household items).  I try to stay really specific about what I'm making so that when I get to the store with my list I know that I won't be buying extra stuffjust in case I want to make something with it.   That's a real problem for me.  And that's exactly why it's really a good thing that I don't have a Trader Joe's or a Central Market close by.  ... continue reading...

It’s Shoe Box Time!

Well guys, National Collection Week for Operation Christmas Child is upon us!  I am so excited to take Weston to our nearest drop-off location and start the box on its journey to a little boy somewhere in this great big world.  I'm excited to sit down and pray with my husband and my son, once again, over the little boy who's going to receive this.  Not only that he'll like the things we got him, but that God will move mightily in his life and that he would know that he is loved. White Chocolate-Covered Walnut Cookies

Prepare yourselves: this is going to be one of the most addicting recipes I've ever posted on this blog. Turkey Ancho Chili

8 Months Old!

Eight months ago this little boy that is sleeping one room over from me was born.  Like he came out of my body.  What a miracle! Whole Wheat Vegan Almond Pumpkin Cookies

¡Ay, caramba!   Yet another pumpkin cookie recipe.  You guys, Nate is freaking out.  Long gone are the days of plain ol' chocolate chip cookies.  Pumpkin has overrun our entire lives, and while I could not be more excited about it, my pumpkin-hating husband is a tad disappointed.
