It’s been a while since I’ve done a full-fledged Blog Love post you guys!  And for that I am so sorry…I pin all of these amazing recipes, and as I said I’ve been eating my way through Pinterest, so really there’s no excuse.  IF I had a valid one it’s just that I’ve been making all of the amazing recipes and then just enjoying them for myself.  That’s fine and all, but as I say on the Blog Love page I love this community and want to share as much of its awesomeness as I can!  So here’s to starting back up again – this week with Gina’s Roasted Eggplant Dip!

First of all, have you read Gina’s blog?  Besides the fact that her recipes are outstanding AND good for you, she is probably one of the funniest bloggers I read.  She’s not afraid to speak her mind, and more often than not I find myself nodding my head in agreement and laughing out loud.

This eggplant dip is one that I pinned a while back but just never found a good eggplant to buy until this past weekend.  I was looking for something to rival my latest hummus addiction, and I think this is the best thing for that.  It’s creamy and has the tahini flavor that I love, plus anything with roasted garlic wins it all in my book.  I enjoyed mine with baby carrots, but I can imagine it would be heaven on some pita chips.  I’m also thinking smeared on sandwiches in lieu of any other condiment, or maybe through a straw?

The possibilities are endless 😉

Here’s the original recipe; the only thing I didn’t add was parsley (because we didn’t have any).  Enjoy!
