MOM! THE MEATLOAF! WE WANT IT NOW!

Good morning y’all!  Can anyone name the movie the post title is from?  I’ll give you a MAJOR hint:  Will Ferrell. 🙂

So, how are you guys doing?  I first want to thank everyone for the encouraging and HONEST comments on yesterday’s post.  I’m feeling much better about things today, and I feel like I was kind of slapped into reality (in a good way) by the things some of y’all had to say.  I feel like if I eat well for one day that means I’ll be 5 lbs thinner (or the equivalent of 5 lbs since I don’t weigh myself), which is obviously skewed.  It’s definitely a journey, no?

Snack yesterday was a 3-minute cookie!  I knew we were going to community group where there’s always awesome food and I tend to eat too much.  I intentionally ate this higher-calorie and higher-density snack beforehand so I wouldn’t stuff myself:

And guess what?  It worked!  There were amazing chips and dips there, and I only had a small amount before digging into the rest of the meal.  The first dip was Reuben Dip that my friend Bekah made:

She used the lowest-fat ingredients she could find:  cream cheese, sour cream, corned beef (be still my heart!), sauerkraut, and a sprinkling of mozzarella.  This stuff was heavenly…I’d say I had about 1/4 cup of it on about 4 wheat crackers.

Next up was a jalapeno cream cheese dip, which was so cool and spicy!

Below are the corn chips that went with it.  All in all I’d say I probably had about 1 Tbsp of the dip on about 8-10 chips.  I love creamy dips, but I don’t eat a lot of it per chip…don’t know why…

There were Doritos, but I had 2 large ones and quit:

When I saw this baking in the oven I almost soiled myself.  Gross?  Perhaps, but I was just that excited!  I mean, look at that beaut!

And homemade mashed potatoes!!!

And a huge, fresh salad with spinach, romaine, carrots, and cherry tomatoes!!!

This was by far one of the best meatloaf recipes I’ve ever had…apparently everything was out of Eating Well, too, which made me feel really good about shoveling it in 🙂  Last night we had a really great conversation about healthy boundaries in unhealthy relationships.  It really opened my eyes and my heart to issues I’ve never had to deal with, or have never actually dealt with.  I’m so thankful for my amazing community of friends!

This morning I changed it up and made an egg and goat cheese sandwich (GASP!!!) instead of a breakfast cookie!

It’s one whole egg and an egg white cooked with non-stick spray and salt + pepper, a whole wheat English muffin, and 1 oz of goat cheese spread on either side of the muffin.

It was really good, and a nice change from the usual, but it could’ve used some hot sauce or something.  Guess I’ll just have to add that tomorrow 🙂

When I got to work I had my skull mug ‘o’ coffee and got after it!

Again, thanks so much for all your support, and thanks to everyone who made yesterday my highest blog numbers yet!  It’s so exciting to share so openly about how I feel and have the amazing support of this community 🙂

In other news, I’m actually really jealous of all you East coasters who have work and school canceled…living in Colorado we don’t get that very often, and I could really go for some cleaning-out-the-house time instead of work right now!

If you’re on the East Coast, what are you doing today?  If you’re not, what are you most looking forward to for the rest of the week? I’m so glad it’s sunny here, and can’t wait to get outside and walk around, then snuggle up with my sweet husband tonight 🙂

    I haven’t had loaf in forever but my favorite part was always the baked ketchup on top. YUM!!
    Glad you had a positive response to yesterdays post! I also feel 5 pounds thinner after a “good”day of eating and 78 pounds heavier after a “bad” day of eating. SO annoying.

    I LOOOOOOVE meatloaf!!! I make a gluten-free version (using oatmeal) for the gluten-challenged roomie. I was actually planning to make it soon. You’ve inspired me 🙂

    Seriously, I have never seen Wedding Crashers – I have to now : )

    I am in VA and it is amazing how much complete chaos can be caused by some snow…crazy!!! I grew up in Vermont though so I am a bit more used to the snowflakes…

    That spread looks awesome!

    Oh, in your “about me” section you are wearing white sunglasses in one of those pictures…LOVE them – where did you get them??? I am looking for some cute white ones, not easy to find!

      haha the glasses i got for $10 at a kiosk in the local mall! i’m sure you can find them all over the place though…they’re just Dolce & Gabana knock-offs!

    The Reuben dip sounds incredible! Actually, the whole spread looks good. I love meatloaf, my stepdad makes it with thinly sliced ham and swiss inside, rolled up like a jellyroll. I will have to make that and post it sometime. I’m most looking forward to the blogger meetup this weekend- can’t wait to meet ya! 🙂

    I love meatloaf…one of the things I really miss now that I don’t eat meat!
