…by reading this post 🙂 But it’s all good because, well, the food is all good! Let me preface first by saying that the photos are not what I’d hoped they’d be. By the time I was done cooking, there was no natural light left and all I really wanted to do was eat the dang meal 🙂
We started with a salad that had romaine, radicchio, carrots, dried cranberries, and almonds:
Ok, ok. The salad will not make you gain 10 pounds. But too much of the next couple of items will! We had Ellie Krieger’s Cowboy Steak (mine was about 5-6 oz):
And GOAT CHEESE AND SWEET ONION STUFFED RICE BALLS! That’s right…a ball of fried (literally) rice stuffed with goat cheese (melty, gooey, creamy, tart) covered in black pepper (SPICE!) and sweet red onions. You can thank me now 🙂
- 2 cups cooked and cooled brown rice (I used my leftover garlic brown rice from 2 nights ago)
- 2 eggs
- 1 cup plain breadcrumbs (I actually just processed whole wheat buns)
- 6 oz goat cheese, cut into 6 1-oz pieces and rolled into balls
- 1 Tbsp cracked black pepper
- 1/4 red onion, chopped
- 1 Tbsp sugar
- 1 Tbsp olive oil
- 2-3 Tbsp water
- lots of vegetable oil
To prep: Mix the cooled rice and the eggs together, then divide the mixture into 6 equal portions and put in the fridge to cool. In a small pan, saute the red onion in the olive oil for 3-4 minutes until it starts to caramelize. Add the water and sugar and let the liquid reduce down. When the onions are done there should be no liquid and the onions should be cooked all the way through. Pour into a bowl and immediately put in freezer to cool it down. Take the goat cheese balls and roll them loosely in the black pepper (it might look like a lot, but trust me…you’ll want the flavor!)
To make: Take half of one portion of the rice, and make a dent in it. Place 1-2 tsp of the onion in the indentation, then place a goat cheese ball on top of that. Take the second half of the rice portion and mold it around the top of the cheese, then seal all of the rice around the internal stuffing. Do this for all 6 portions of rice. Place them all on a plate and put in the freezer for 15-20 minutes until the rice is a little more solid.
To cook: Meanwhile pour enough vegetable oil in a pant to come up about halfway on one of the balls. Heat over medium low heat. When you stick a wooden spoon handle in and bubbles form around the handle, the oil is ready. Coat 2 balls in breadcrumbs, and gently place in the hot oil. Be careful! Fry for 2 minutes or so, then gently turn each ball over with the wooden spoon. Another 2 minutes, or until golden brown, on the second side. Remove from the oil onto paper towels, and sprinkle a little salt on top. Serve warm and enjoy the melange of flavors and textures!
We watched Modern Family, and then I remembered I was going to make cinnamon rolls for the office! I used the America’s Test kitchen recipe for that and a loaf of zucchini bread (I can’t and won’t publish those recipes since they’re not mine). I WILL post the recipe for the topper though: Maple Cinnamon Cream Cheese Frosting!
- 8 oz cream cheese, softened
- 1 stick butter, softened
- 1 lb powdered sugar
- 2 Tbsp cinnamon
- 2 Tbsp maple syrup (the REAL stuff!)
- 1-3 Tbsp buttermilk (you could use regular milk as well if you don’t have buttermilk)
Cream the butter and cream cheese together. Add the maple syrup and cinnamon and mix well. Add the powdered sugar, mixing well, and add the buttermilk 1 Tbsp at a time until you reach the desired consistency. Pour or spread on top of rolls and try not to eat too much of it with a spoon. It might make your tummy hurt. Just sayin’ 😉
As soon as all the baking was done, I cleaned up and went to bed. Yesterday was a full day! This morning I got up and did some yoga, then fueled with a Chocolate-Covered Strawberry Green Monster:
So obviously this meal/dessert combo was NOT super healthy and will likely not help me with my goal weight; however, yesterday was one of those days where I knew I wanted something unhealthy and really just needed to splurge. The good news is that I do not feel guilty about it and am ready to move on to healthier things today!
