…by reading this post 🙂 But it’s all good because, well, the food is all good! Let me preface first by saying that the photos are not what I’d hoped they’d be. By the time I was done cooking, there was no natural light left and all I really wanted to do was eat the dang meal 🙂
We started with a salad that had romaine, radicchio, carrots, dried cranberries, and almonds:
Ok, ok. The salad will not make you gain 10 pounds. But too much of the next couple of items will! We had Ellie Krieger’s Cowboy Steak (mine was about 5-6 oz):
And GOAT CHEESE AND SWEET ONION STUFFED RICE BALLS! That’s right…a ball of fried (literally) rice stuffed with goat cheese (melty, gooey, creamy, tart) covered in black pepper (SPICE!) and sweet red onions. You can thank me now 🙂
And just so you can see the inside and cry out in agony that you haven’t had these yet…
Y’all, while this recipe was fairly intensive, it was fabulous. I probably could have eaten the whole batch if the steak hadn’t been so dang good! Here’s the recipe/procedure:
- 2 cups cooked and cooled brown rice (I used my leftover garlic brown rice from 2 nights ago)
- 2 eggs
- 1 cup plain breadcrumbs (I actually just processed whole wheat buns)
- 6 oz goat cheese, cut into 6 1-oz pieces and rolled into balls
- 1 Tbsp cracked black pepper
- 1/4 red onion, chopped
- 1 Tbsp sugar
- 1 Tbsp olive oil
- 2-3 Tbsp water
- lots of vegetable oil
- salt
To prep: Mix the cooled rice and the eggs together, then divide the mixture into 6 equal portions and put in the fridge to cool. In a small pan, saute the red onion in the olive oil for 3-4 minutes until it starts to caramelize. Add the water and sugar and let the liquid reduce down. When the onions are done there should be no liquid and the onions should be cooked all the way through. Pour into a bowl and immediately put in freezer to cool it down. Take the goat cheese balls and roll them loosely in the black pepper (it might look like a lot, but trust me…you’ll want the flavor!)
To make: Take half of one portion of the rice, and make a dent in it. Place 1-2 tsp of the onion in the indentation, then place a goat cheese ball on top of that. Take the second half of the rice portion and mold it around the top of the cheese, then seal all of the rice around the internal stuffing. Do this for all 6 portions of rice. Place them all on a plate and put in the freezer for 15-20 minutes until the rice is a little more solid.
To cook: Meanwhile pour enough vegetable oil in a pant to come up about halfway on one of the balls. Heat over medium low heat. When you stick a wooden spoon handle in and bubbles form around the handle, the oil is ready. Coat 2 balls in breadcrumbs, and gently place in the hot oil. Be careful! Fry for 2 minutes or so, then gently turn each ball over with the wooden spoon. Another 2 minutes, or until golden brown, on the second side. Remove from the oil onto paper towels, and sprinkle a little salt on top. Serve warm and enjoy the melange of flavors and textures!
We watched Modern Family, and then I remembered I was going to make cinnamon rolls for the office! I used the America’s Test kitchen recipe for that and a loaf of zucchini bread (I can’t and won’t publish those recipes since they’re not mine). I WILL post the recipe for the topper though: Maple Cinnamon Cream Cheese Frosting!
- 8 oz cream cheese, softened
- 1 stick butter, softened
- 1 lb powdered sugar
- 2 Tbsp cinnamon
- 2 Tbsp maple syrup (the REAL stuff!)
- 1-3 Tbsp buttermilk (you could use regular milk as well if you don’t have buttermilk)
Cream the butter and cream cheese together. Add the maple syrup and cinnamon and mix well. Add the powdered sugar, mixing well, and add the buttermilk 1 Tbsp at a time until you reach the desired consistency. Pour or spread on top of rolls and try not to eat too much of it with a spoon. It might make your tummy hurt. Just sayin’ 😉
As soon as all the baking was done, I cleaned up and went to bed. Yesterday was a full day! This morning I got up and did some yoga, then fueled with a Chocolate-Covered Strawberry Green Monster:
It was OK…I think I might have added too much cocoa powder though because it was a bit chalky. Still made me feel great though!
So obviously this meal/dessert combo was NOT super healthy and will likely not help me with my goal weight; however, yesterday was one of those days where I knew I wanted something unhealthy and really just needed to splurge. The good news is that I do not feel guilty about it and am ready to move on to healthier things today!
Do you ever just CRAVE something that’s not good for you? What’s your #1 unhealthy item? I do all the time, and I’m working on controlling that a little better, but when I crave something “bad” it’s usually got cheese and lots of carbs 😉

My weaknesses are ice cream, potato chips and any sort of fried potato – hashbrowns being the worst offender. I don’t think I’ve ever eaten breakfast out without ordering them!
I agree with some of the others. I try to eat the best I can all week, and if I’m feeling a little craving, I give in and let myself have it. Eventually I get my hands on whatever it is, and if I’ve deprived myself, I usually end up eating a lot more than I would have had I just eaten it in the first place.

Boy your headline is so fitting! When I first saw the title I thought, well what’s this post going to be about? But it’s funny because people say stuff all the time like “If I just look at dessert I gain 10 pounds” That cinnamon roll dish looks so good that someone might just gain weight looking at it! 🙂 And thank you so much for your sweet comment on my last post. I have never been a huge fan of fried stuff, especially cheese. And I don’t normally love goat cheese. BUT that looks amazing!!!!
And I would say the unhealthy food I crave the most would have to be any sort of baked good. Or pizza.

Good for you that you don’t feel guilty! I crave unhealthy food often and I tend to honor those cravings. It’s ends up bad in the long run if you don’t!

I crave unhealthy stuff all the time. I used to just say to myself “no, I don’t eat that stuff,” but now I allow myself one treat a day so I can get a fix for whatever I desire while still eating healthy for the most part.

Well, you now me and my waxing philosophical.
I don’t classify food as good or bad, not even in quotation marks because those terms just perpetuate a cycle that doesn’t work for me. Food is not a moral issue. Sure, there are foods that honor our health and others that don’t but it isn’t bad of me to choose foods that don’t always honor my health. Sometimes, a little food love is just what we need.
But, I also think it is important to examine those times when we do choose the food love. What do those cravings really represent? Deprivation? Comfort? Sweetness of life? A warm hug?
For me, when I start to crave cheeseburgers, french fries and pizza, those are signals that my body is sending that tell me that one of two things is going on. In most cases, those foods represent stress and wanting to just unwind. Other times, they represent feeling deprived because those are the foods that I always labeled as “bad” back in the day.
When I crave dessert type foods, I am often sad, lonely, just needing a hug. I can honestly say that I rarely crave sweet foods anymore and that when I do, it is typically a signal.
I don’t think that all cravings are a sign of emotional needs, some food cravings are a sign of your nutrient needs and it is important to know what those are too. You know when you go on vacation and overeat on foods that don’t honor health and all you want is a salad. That is your body screaming for real nutrition. I get cravings for chicken and beef when my iron starts to become low. To me, those cravings feel “primal” and are very unlike the cravings of emotional needs.
I have a whole post coming on this very topic hopefully next week. Of course at this point, I could probably just copy and paste from here. 😀

My number one unhealthy craving goes to potatoe chips (esp sour cream and onion or bbq)… I never ever buy them bc I’d eat the entire bag… not ok ;P ..but if someone has them at a bbq, its definitely an excersize in self control.
