White Chocolate Dipped Spice Cookies

“Scooter, what cookies did you make for work tomorrow?” he asked.

 

“Molasses spice cookies dipped in white chocolate,” I answered.

 

“Scooter, why are you making those?  It’s not Christmas yet!” was the reply.

 

You’re right Nate – it’s not Christmas…not yet.  But it’s always Christmas in my heart (cheeseball)!

All I have to say is that you know you’ve hit the jackpot when you Google “spicy molasses cookies” and the first recipe that pops up is from The Pioneer Woman.

 

You know you’ve hit a double jackpot (is there such a thing?!) when you have the same idea as her to coat said cookies in melted white chocolate.

 

SWOON.

You can find the recipe for the cookies by clicking here.  HOWEVER, I will say that I was pretty worried about the whole melted white chocolate thing.

 

See, what had happened was the last time I tried to melt chocolate chips of any kind they turned into a big ball of flaky burned chocolate.

 

Something tells me this is not desirable.  I don’t know where I got that conclusion…

 

The secret though is to melt them in the microwave over really low heat just a little at a time.  To melt my chips, I just added half the bag to a microwave-safe bowl.  Microwave on 30% power for 20 seconds.  Stir and repeat until all the chocolate is melted and dippable.  Then dip, baby, dip to your heart’s content!

P.S. ‘Dippable’ is totally a word…just ask me!

    You can bake Christmas cookies anytime you like….they look tasty! I love the pics of your food…it helps me when I bake to have pictures.

    Ah this looks amazing. I’m not a white chocolate fan so I would dip it in dark chocolate. Makes me miss the holiday season..

    We made these every christmas too!! And as we creep ever closer to the holidays they’ve crossed my mind several times…and I, too, kept thinking “..but it’s not christmas yet!!”…thanks for taking away the excuse:)

    Heather – you totally ARE Christmas! You exude all the goodness of the incredible Christmas spirit. And these cookies are awesome! You could use food coloring (if you aren’t against that) and make the white chocolate red + green. 🙂

    I love Christmas and believe it’s never too early to start making cookies, watching Christmas movies, and getting out the stockings. Which will all happen immediately after I eat that turkey on Thanksgiving. These cookies look delish!

    I lllluuuurrrrrvvvv white chocolate.

    That being said, I’ve also had some disasters in trying to melt it. Note to self- don’t buy cheap white chocolate for something like this!

    I love these. Spice cookies are delicious but sometimes not quite sweet enough. White chocolate sounds like a perfect complement.
