Fact:  I actually don’t love frosting.

I love the idea of frosting, but if you remember from this post my favorite birthday cake growing up was not really cake at all.  My sister on the other hand is a frosting FIEND.  She always wanted double whatever the amount of frosting a grown man could eat and then some.

You guys, Pioneer Woman has changed my mind on frosting, and there’s no turning back now.

When I was thinking of treats to make for my office I knew I wanted something with sugar cookies, but any sugar cookie recipe I’ve tried I haven’t really been in love with.  Knowing that I love my PW cookbook, I quickly turned to the Angel Sugar Cookies page and made sure I had the ingredients.

Check!

I made a couple of alterations, namely adding more flour because of that whole altitude baking thing and making them into bars (lazy lazy) by pressing into a 9 x 13 pan and baking for 25 minutes at 350.  Simple, delicious, and just fine on their own.

But y’all.

This frosting has changed my life. I wish I could claim the recipe as my own, but it’s not.  I don’t care though…I would eat this stuff for breakfast, lunch, and dinner.  And snacks.  It’s that good.

I added a 1 cup of peanut butter and 1/2 cup cocoa powder to the mix just to make the cookie bars extra fancy.  And did it ever go over well!  I took these to the office and they were gone in a matter of minutes!

The cookie bars were soft, tender, and perfectly sweet.  The frosting is just SOOOOOOOO creamy and the richness from the peanut butter and chocolate really stand out.  It’s not too sweet, but packs a ton of flavor.  And that’s what frosting should be!

Confession:  my meals up until dinner were a pound of brussels sprouts and 3 of these cookie bars.

      nope, it’s the pioneer woman recipe for frosting (it’s linked at the top) but i added the cocoa powder and peanut butter 🙂

    I love icing and frequently eat a spooful here or there when I’m baking up treats. It’s so tasty.

    Your bars look so good. I love sugar cookies and I love how thick they look! Your coworkers must love you!!!

    Umm….YUM! I can’t believe I still haven’t bought PWs cookbook. I had every intention, and just haven’t gotten around to it (after a year, so sad!) I doubt seriously that I could limit myself to only three of those delectable looking bars you made. I’ve seen your name on PW comments a few times, and finally decided to stop by and see what Heather’s Dish was about!

    Ah ha ha! You make me laugh–love the brussels sprouts and cookie bar diet. 🙂 Yesterday I ate three pieces of homemade chocolate chip pumpkin bread at 5:30 pm. Needless to say, that was my dinner. So glad I’m not the only one who does that!

    These cookie bars look fabulous! I love that you make office treats every week…what a cool thing to do! (and a great way to bake w/o eating it all yourself)

    I LOVE the Pioneer Woman! I fear that cookbook though. Unless I can find a way to lighten up the recipes I don’t think I have the willpower for it;)

    Sometimes I think bars taste better than cookies — because they are thicker. Either way these look awesome — and PB/Choc frosting is the best idea!
