I think it’s probably a marketing rule that if you add the word “berry” to the end of anything it’s an automatic hit.
Which, you know, is why I decided to call this a peachberry salad. I figure we all need more salad in our lives, and I’m not above employing marketing tricks to get that to happen. Plus the dressing makes it feel totally naughty when it’s really just a nice, healthy colorful salad. Tricks, y’all. I’m not above them!
You guys, I know I’ve harped on this for pretty much this entire summer, but homemade salad dressing will ROCK YOUR WORLD. You think you like that bottled stuff? You think it’s good?
YOU DON’T KNOW GOOD. (WHOA – apparently I’m getting a little dramatic. Sorry).
OK, so maybe you DO know good, but I promise once you get the hang of making your own dressings you’ll never go back. I’m totally that person at the grocery store who snubs the dressing aisle these days. Now I’m not saying I won’t eat it at all. Nope, I like food in general too much. But if I can do anything these days it’s make a mean salad dressing that makes me – a former salad hater – crave the stuff.
SUMMER PEACHBERRY SALAD WITH CREAMY YOGURT POPPYSEED DRESSING
For the salad:
- 3 cups chopped romaine lettuce
- 3 cups fresh baby spinach
- 2 fresh peaches, pitted and cut into bite-size pieces
- 1 pint strawberries, hulled and halved
- 1 cup chopped carrots
- 1/2 cup slivered blanched almonds
- 1 avocado, pitted and cut into bite-size pieces
For the creamy yogurt poppyseed dressing:
- 1/2 cup plain Greek yogurt
- 2 Tbsp apple cider vinegar
- 2 Tbsp honey
- 1 Tbsp mayonnaise
- 2 tsp mustard
- 2 tsp poppy seeds
- salt and pepper to taste
For the salad, toss together the Romaine and baby spinach. Top with the peaches, strawberries, carrots, almonds, and chopped avocado. For the dressing, whisk together the yogurt, vinegar, honey, mayonnaise, mustard and poppyseeds; salt and pepper to taste. To serve you can either portion out the salad and have everyone serve the dressing themselves, OR if there aren’t any picky salad dressing eaters just toss the salad and the dressing together!
