I’m a little hesitant to put this out there, mainly because in the past decade (<——- WHOA this blog is getting old!) I haven’t really stuck with a series for more than a few weeks. HOWEVER, I really love creating recipes for you guys and providing healthy dinner inspiration, and the thing that really holds me back these days is time. All the time that goes into my Beautycounter job, plus creating recipes, staging it perfectly, getting the shot, editing the photos, writing the post – well, it’s a lot of time if we’re getting exact. I sure hope that doesn’t sound like complaining, but it does get in the way of me just sharing with you guys.
So I’m going to (fingers crossed) start a new series that I’m going to call “Straight from the Kitchen.” The idea is that, thanks to Daylight Savings Time, I can now take well-lit photos of my food…straight from the kitchen. The things I make on a random weeknight that ended up being a favorite will now be documented. I’ll be able to share a little more real-life inspiration in the food department, and you guys can see how I combine ingredients and flavors to come up with something for dinner.
Sometimes it’s genius. Sometimes I eat nothing but a random stirfry every night. But the one thing I promise you won’t find are recipes that require a paycheck’s worth of ingredients, 10 hours of cook/prep time, and the general feeling that you’re messing something up along the way.
We’re going to start off this series with a little something I made two nights ago that I am L-O-V-I-N-G: 5-Ingredient Yogurt Salsa Ranch Dressing!
Here’s the quick back story: I love a good taco salad, and I have been unabashedly in love with Pinch of Yum’s Cauliflower Walnut Taco Meat for a year now. This stuff is good by the spoonful, but I really love to top a big salad of spinach, broccoli slaw, shredded carrots, tomatoes (in season), avocado and corn with it.
Everything’s great…but the dressing has always been a struggle for me. A vinaigrette just seems too risky, and let’s be honest: bottled Ranch dressings are the worst. The healthy ones, the unhealthy ones, they all suck. There, I said it, and I don’t take it back.
I started Googling a recipe for homemade Ranch with salsa that was also made out of yogurt, and y’all NOTHING WAS COMING UP. Nothing that sounded good anyway! I’m the kind of person that, rather than complaining, would rather just fix a problem…so I did.
And that is how 5-Ingredient Yogurt Salsa Ranch Dressing was born!
Far be it from me to boss you around and tell you how to eat your salad dressing (especially since I just told you how I ate mine), but I think this is one you’ll really enjoy!
5-Ingredient Yogurt Salsa Ranch Dressing
Makes about 1-1/2 cups dressing
Ingredients
- 1 cup plain Greek yogurt (choose your fat content)
- 1/2 cup jarred salsa of choice (I love this one)
- 1 garlic clove, minced
- 1 tablespoon lime juice
- 2 tablespoons milk of choice (I used cow’s milk)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- pinch of cayenne pepper (optional)
Directions
- Combine all ingredients in a high speed blender or food processor.
- Blend/process on high for about 10 seconds.
- Enjoy, then store the remainder in the fridge in an airtight container.
- Note: if you don’t have a blender/food processor or you want it to have a chunkier consistency you can certainly just use a whisk and bowl!
