Rocky Road Sandwich Cookies – OMG. I remember growing up my dad always loved rocky road ice cream and I never ‘got it’ until my tastebuds did a little growing up of their own. Like I said, any excuse to eat two cookies at once sounds good to me!
Summer Tomato & Ricotta Calzones – This one brings back so many good memories from this past summer. I have to say, summer in Colorado is so very nice. We ate these bad boys and headed out to see a Jimmy Buffett cover band with Wes, where he promptly fell asleep and I promptly ate chocolate gelato. Mmmmmmm…
Raspberry Yogurt Muffins – I’ll be the first to admit, I love raspberries but not usually when they’re fresh. But when they’re fresh and baked in a yogurt-based muffin? Um, okay, yes please.
Italian Red Beans & Rice – Mmmmmmmm…talk about comforting. You don’t even have to eat this at any particular time of year – it’s perfect year round! I’m a big fan of the Italian sausage in there, but you can certainly leave it out if you’re wanting a vegetarian version. I’m kind of drooling just looking at it…
Slow Cooker Shredded Brisket Taquitos – Beef + beer + slow cooking = LOVE. I will admit that at times these can be hard to roll, depending on the freshness of your tortillas and the climate, but should they explode don’t worry. Just eat. You’ll be glad you did!
