Did you guys know that this is by far one of my highest-pinned, frequently made, most shared recipes of all time? Trust me, there’s a reason why – it’s just that good! So versatile, and in my opinion the perfect summer side dish. It’s vegan, clean, and only gets better as it sits!
While a lot of you that follow me are paleo and/or keto (or a combination of the two), I also know that many of you follow the blue zone diets and as such this fits perfectly in with those. All the healthy things, tons of fiber, and just so good!
