Who here is a condiment lover? (raises hands high and waves them around frantically) I know that I could sometimes just eat a condiment by itself, and I have a little dude who is exactly the same way. If he doesn’t have a “dip” with every meal then something’s missing and he just can’t function!
I’ll be honest and say that creamy or particularly spicy condiments are usually my favorites – Ranch dressing of every variety, guacamole, pico de gallo, salsa, rémoulade, etc. They pair so well with everything you could possibly dip into said condiments, slather on sandwiches, or eat with veggies!
An unsung hero in my book, though is a great pesto. It’s truly one of the most versatile condiments out there, and it’s almost silly how easy it is to make it from scratch. Some leafy, herbacious flavors, garlic, nuts, cheese and oil all take a whirl in the blender and voila! A condiment, sauce, or dip you can enjoy anywhere!
This particular version is great because it’s actually super budget friendly, thanks in large part to copious amounts of spinach in lieu of a more expensive herb like basil. Sure, it’s summer time and for many people basil is aplenty, but even still it’s not always a flavor everyone enjoys. The beauty of using something like a mix of spinach and arugula is that the flavor is still delicious, but not quite as pungent, which means it can work with so many meal options.
I also love to use salted pistachios in this recipe because pistachios give a great creamy texture plus a little salt without being overwhelming. They pair so well with the feta cheese (another surprise ingredient) and olive oil, making it a really cohesive dish. Little ones won’t even know all the green goodness is from so many healthy things – and if you’re like me? You’ll just call it Hulk sauce and they’ll gobble it up!

HULK SAUCE: CREAMY SPINACH PISTACHIO PESTO
Makes about 1-1/2 cups
Ingredients:
- 1 (5 oz) container Organicgirl good clean greens baby spinach & arugula
- 1/2 cup shelled Wonderful pistachios
- 2-3 cloves garlic, roughly chopped
- 3 ounces feta cheese
- 1/2 cup (or more) extra virgin olive oil
- 2 tablespoons lemon juice
- salt and pepper to taste
Directions:
- Combine all ingredients except the salt and pepper into a high-speed blender or food processor.
- First, pulse to combine and then stop the blender and scrape down the edges.
- Start the blender again and allow to blend until super creamy.
- Enjoy immediately, or store in an airtight container in the fridge for up to 2 weeks.
- Enjoy!
