Hubby-Needs-Some-Sugar Cookies

No no, I’m talking about THAT kind of sugar 😉

I’m talking about the kind Nate craves after eating something savory, like the turkey & spinach meatballs with penne and marinara we had last night:

To be honest it was a long day at work and I was extremely tired, not to mention sad that I didn’t actually go through with making homemade pasta like I’d announced on Twitter.  But when I see this man’s sweet face asking for cookies, I just can’t help myself (please ignore my shiny face…it was hot and humid!):

HUBBY-NEEDS-SOME-SUGAR COOKIES

  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 tsp vanilla
  • 1 egg
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/3 cups flour
  • 1 cup semi-sweet chocolate chips

First, bring the butter to room temperature.  You can do this by planning ahead and leaving it out for an hour or so, OR you can do the Heather-lazy way and put it in the microwave for 30 seconds at 40% power.

Then add the sugar and butter together in a bowl:

And cream them together.  This is what it should look like:

Add the egg and vanilla – and, on a side note, I always add more vanilla than what is called for.  Hey, some rules are made to be broken!

Add the salt, baking soda, and flour.  Mix til just combined.  Then add the chocolate chips and fold in!

The great thing is you can add anything to these…M&Ms, caramels, dollops of peanut (be still my heart!) – really, anything!  Spoon the dough onto a cookie sheet and bake at 350 for 10-12 minutes.

Nate said I should have called these albino cookies…but I wasn’t so sure that would be politically correct. You just never know these days!

Considering there were about 14 of these and there are now 2, I think he liked ’em 🙂

Surprise (Hopefully)

I know that this is a massive tease, but bear with me:  I’m hoping that by the end of this week I will have a wonderful surprise for you all!  I’m not going to give out any details, but I’m really hoping to be able to let y’all in on everything soon.  Until then, I would SO appreciate any prayers and thoughts y’all are willing to throw my way.  I feel like I’m in the midst of changing the world…and you all can be apart of it!

    Three years later, I’m perusing your recipes – just came over from PW’s Tasty Kitchen. Wondering what your “news” was, but I now have two recipes. Bookmarking the meatballs and am eating a cookie right now. Used honey roasted and plain peanuts, and M and M’s. Made for one yummy treat this morning, I will save the rest.

    Yum, sugar cookies! And the turkey and spinach meatballs with penne and marinara sounds good too. I love sugar cookies, and their so easy to make! But they do disappear pretty fast 🙂

    My husband and I both crave sugar after dinner. In fact, we have to tell each other No sometimes because we often feel like we’re entitled to dessert after eating every nightly meal. But I am SO glad you posted the recipe because I haven’t found a sugar cookie recipe online that I like and yours look so good. I look forward to your announcement as well. 🙂

      I normally like to add actual onion and garlic to my meatball, but I just didn’t have any on hand and was in a hurry since we were hungry! These meatballs were super tender and moist!

      1 lb ground turkey
      1 egg
      1/2 cup Italian breadcrumbs
      1/4 cup nonfat milk
      1 cup chopped spinach
      2 Tbsp grated parmesan cheese
      1 tsp onion powder
      1 tsp garlic powder
      1 tsp crushed red pepper flakes
      1/2 tsp salt
      1/2 tsp black pepper

      Throw everything into a bowl and combine lightly with a fork (this keeps the meat from getting too tough). Once it’s all combined, take the mixture in about 2 Tbsp increments and roll into balls. Bake on a baking sheet lined with foil and coated with nonstick spray at 400 for 15-20 minutes, until done all the way through. Voila!

    My hubby has been craving my famous choc chip cookies, told me that all this vegan cooking has ruined me, haha…I should make them for him this week, he deserves it! the recipe looks very similar, i add brown sugar to mine too..yours look AMAZING!

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

3 things you can do RIGHT NOW to improve your day: 3 things you can do RIGHT NOW to improve your day:

1️⃣ SMILE! Even if you don’t feel like it, smiling (even forcing it to the point of feeling weird) has actually been scientifically proven to improve mood, lower stress, and boost your immune system. I actually recommend doing it awkwardly around other people because it’ll make them smile too 😉

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
