Healthy Dinner

Morning y’all! How’s it going?  I love that this week not only feels short, but IS short!

Last night Amy had us over for dinner, and I was really excited that she did!  She made the most amazing, healthy dinner…it was everything I wanted to eat!

Grilled chicken, roasted zucchini and yellow squash, whole wheat couscous with sundried tomatoes, fruit salad, and a nice slice of grainy bread with butter.  HOLY YUM right?  Then she pulled out all the stops with a slice of brownie and mint chocolate chip ice cream!

It was so good, and I’m so glad she had us over…we brought the dogs to play with her dog, Levi, and we just had a great time sitting and talking for a while.  Amy’s a teacher and has the summer off…LUCKY!!! Afterwards I went home and made a TON of carrot cake cupcakes for work today:

You guys know I’m not really one for making individual treats…that’s my laziness showing through!  But tomorrow is my boss’s last day at work, so I wanted to do something special 🙂  The icing was the best part to make though:  I pulled a Sandra Lee and put the icing in a big baggie, snipped the tip of the bag off, and piped the icing on.  It was much easier, faster, and prettier than it would have been if I’d used a knife!

This morning I got up and did my second day of the HardCore Challenge…YIKES.  My abs are screaming at me now, but I know it’ll be worth it later on.  Plus I did it while watching a recorded episode of Diners, Drive-Ins, and Dives, which I think we all know can encourage anyone to work out 🙂  Breakfast was Jenna’s Oatmeal Pancakes (again – told you I was obsessed!)

I sprinkled a teeny bit (~1 Tbsp) of brown sugar in there too, just to add a little somthin’ extra.  Honestly, I could ravage these breakfast, lunch, and dinner, no questions asked…they’re that good!

What’s your ideal healthy dinner?  What all does it include?  What your about your favorite UNhealthy dinner? I find that most healthy dinners I crave aren’t typically salad-based, but rather a great lean protein and veggies thrown on the grill.  That extra depth of flavor from grilling really makes most foods taste that much better!  And unhealthy?  I don’t even know where to start…although at the moment I would say either pizza or fried chicken with mashed potatoes, mac & cheese, and green beans (cooked with tons of bacon :))

    My favorite healthy dinner is some kind of fish. But my favorite unhealthy meal is easily Chinese! Greasy spoon chinese…egg rolls…sweet and sour chicken….YUM YUM YUM!!

    I think both of my ideal dinners are the same – they both involve pizza. For a healthier pizza I like to use a thin crust, lots of veggies, and small amounts of sauce and cheese. And I don’t mind it to be cheesier and greasier for a delicious unhealthy dinner.

    My fav healthy dinner is salmon burgers with either roasted red potato fries or grilled veggies.

    Unhealthy, the nights where I just want popcorn and junior mints.

    I love my healthy meal, I eat it very often!

    healthy=a HUGE bowl of roasted zucchini w/ goat cheese and a fruit salad

    unhealthy= another HUGE bowl of butternut squash ravioli with brown butter

    Brownies and mint chocolate chip ice cream?? YES PLEASE.

    Healthy dinners are usually veg, veg, more veg. Less healthy dinners are usually like…waffles with peanut butter and chocolate. Haha.

    I love salads for dinner 🙂 If I had to choose an unhealthy dinner it would be pizza…but without cheese 😉

    That definitely looks like perfect dinner… especially with the ice cream at the end! 🙂
    Fave healthy dinner…hmmm…maybe a piece of italian marinated grilled chicken with some baked sweet potato fries & roasted veggies.
    Fave unhealthy meal…probably at my favorite italian restaurant, which would include at least 3 pieces from the bread basket, and chicken sorrento, and lots of red sauce!!

    Fav healthy dinner would be a grilled salmon fillet with a side of grilled veggies and a hunk of fresh, whole wheat bread!

    Fav unhealthy dinner would be cheesy cheesy pizza! Or real mac + cheese. Anything with carbs and cheese really. 🙂

    my ideal dinner would be some baked fish, a side of roasted veggies and some steamed leafy greens or a side salad.

    unhealthy? a HUGE hunk of lasagna. not really unhealthy but just a lot of fat from the cheese.

    I see the trend with bacon…bacon wrapped around just about anything is my favorite. My unhealthy is sirloin wrapped in bacon with stuffed jalapenos wrapped in bacon and southern mashed potatoes…yum.

    My healthy meal is vegetarian chili…really opposite ends of the food chain. I have a great recipe if you would like to try it!

    Healthy would probably be filet with sweet potato fries. Unhealthy would definitely mac and cheese…and tons of bacon!

    We are pretty good about making healthy dinners. It’s usually salmon, salad and steamed veggies.

    My favorite “unhealthy” dinners are usually pizza. 😉

    My favorite healthy dinner is sushi! Partly because I don’t make it myself 🙂

    My favorite unhealthy meal is real macaroni and cheese with bacon. (Definitely not from a box.) Yum!

    I did day 3 this morning before work and i thought i may cry on the leg lifts. i did a fourth one and on man was it hard. those carrot cake cupcakes look divine!
