Hello! Long time no chat, right? We’ve spent the past week or so with family which has been so wonderful, but getting back to the swing of things certainly takes more time than it used to with two kiddos.
I figured that while I work on some time-sensitive stuff and try to catch up on recipes for this here blog I’d do another installment of What a Food Blogger Eats. On the days when I’m not making my own recipes or working on creating new ones I try to make things from bloggers that I love. While I realize I’ve already done muffins before, I can’t help but share this wonderful version from my beautiful friend Lindsay.
See, here’s the thing with muffins these days: they make the PERFECT snack for me and the boys, they pack and travel well, and we can eat them any time of day. I love a great flour-laden blueberry muffin recipe, but the almond flour keeps us full so much longer and keeps the ol’ carb count down so we don’t get blood sugar spikes. Kind of a wonder food, right?
They’re paleo, they can be made in a blender (although I just used a whisk and a bowl), and they taste AMAZING. I love spreading mine with a smear of peanut butter for a quick snack or even dessert. They just have this great texture with a hint of banana and maple, and truly are perfect with a cup of coffee!
