Confession: I never really loved Rice Krispies treats. Sure, they’re crunchy and sweet and full of that snap-krackle-POP!, but I just couldn’t jump on that bandwagon.
Until now. Turns out all you gotta do to change my mind these days is add a little extra chocolate. Who knew? Just toss in some tart dried cherries and looks like Heather’s going home happy in the dessert department.
And if Heather ain’t happy, ain’t nobody happy. At least that’s what we’re going with today. Tomorrow could be different…I’ll be sure to let you know 😉
Since summer’s coming along nicely (minus that falling snow right now…) I figure easy desserts are the way to go. Plus, since our oven takes approximate 12 bajillion hours to cool down after being turned off, no-bake desserts are kind of my new thing. As of last night.
Anything to keep the house cool, right?
CHERRY CHOCOLATE RICE KRISPIES TREATS
- 3 Tbsp butter
- 4 heaping cups mini marshmallows
- 6 cups Rice Krispies
- 1 cup chocolate chips
- 1 cup dried cherries
- 1 tsp salt
In a saucepan melt the butter over low heat. Add the marshmallows and, stirring constantly, melt them completely. Remove from heat and stir in Rice Krispies and salt. Fold in the chocolate and cherries at the end, being careful not to melt the chips too much. Press into a greased 9×13 pan and let cool completely before eating.
Or don’t. I won’t judge.
Remember guys, it’s all about a cool house – the cooler it is the more dessert you can comfortably eat!

The chocolate cherry combination is one of my very favorites! What a great spin on the classic rice krispie treat! My children may not love them, but that’s ok…that means there will be more for me! 😉

This looks so good. But the problem is my sweet, but finicky hubby. He loooves Rice Krispy treats. I learned early on in my marriage not to use anything other than Jet Puff marshmallows. He can tell. It’s kinda scary. 🙂 LOL! Maybe I’ll try these on time along with a regular batch.
