If there was any one kind of food I could eat for the rest of my life it would, without a doubt, be Mediterranean food. The salty, lemony, garlicky, vegetable-filled goodness gets me every time, and I look for ways to make any meal taste more like it’s freshly made on a beach in Greece.
Rice salad is something I never heard of until I moved to Arkansas, which in and of itself is terribly sad. I really don’t know if there could be a more versatile dish that is truly perfect for almost any occasion. Sweet or savory, and with any kind of flavor fusion you could dream of, rice salads are an inexpensive and delicious way to fill a plate with great ingredients!
As always, I like to make this dish in stages to make the final product easier to put together and serve. I like to make the vinaigrette in the evening, then cook the rice in the morning while I’m getting ready. When the rice is cooked I stir in the dressing, then allow it to chill for a few hours. When it’s almost dinnertime I drain and chop the remaining ingredients and then toss together to serve. Voila! Dinner is served, within minutes, and no one needs to know the extra steps!
